Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

We have pasta bake made with tinned tuna and sweet corn, and a cheese sauce made with the last of the milk.
Bananas for pudding.

We have fishcakes and peas which DH got when he was out (lots of things missing from our Tesco delivery). No dessert but hopefully some Doritos and Salsa later whilst we watch Saturday Night Take Away.

we have macaroni cheese with broccoli tonight.

leftover ccasserole for lunch. DS1 said he did not like 'beef stew' I asked him how he felt about 'beef casserole' and he though then shrugged and said 'Okay'. So that is what we had Hmm

Tonight will be vegetarian shepherds pie.
Base will be made with green lentils and topped with cheesy cauliflower mash. So delicious. Even my picky 16 year old eats it.

Slow cooked beef here tonight. Not sure on dessert...I'm reasonably sure my gift from dd1 is chocolates so we might share those.

I was really looking forward to cooking the rib of beef which arrived with my order yesterday for dinner today with all the trimmings and slice the rest and freeze with gravy. Unfortunately I've found a couple of rashers of bacon in my fridge which aren't going to last much longer, ditto tomatoes so I'm having those with beans and egg on toast. I'm determined not to waste any food, especially now so will have the beef tomorrow. Chocolate and blood orange ice cream for pudding.

Lunch was roast beef (thanks to M&S yesterday), roast potatoes, scabby carrots, slightly yellow cabbage and some rather past-their-best mange-tout followed by rhubarb crumble.

This afternoon I have been mostly eating birthday cake, drinking tea, looking up how to make croutons from stale bread, and wondering how to eke out the remains of the beef to feed 4 adults tomorrow.

Kids wanted McDonald’s for lunch so instead I made chicken strips which they had with salad and chips. Tonight they are having sandwiches with fruit and I’m having weetabix

We’d had a duck n the freezer since Christmas as we didn’t get round to cooking it so roasting that tonight to put in wraps from the freezer with lettuce & hoisin sauce

We have some left over roast dinner from last night. I had hoped to do lamb yesterday but the joint of lamb I had bought and frozen a few weeks ago smelt horrid when it was defrosted- really annoyed as when bought, it had a long date on it and was frozen straight away. 😡

Would have made meals for 4 for 2 days. Not something you want to have wasted at this time. I ended up having to defrost some chicken breasts that were planned for later in the week.
