Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Well, I've just bought a new toaster (its fab) so I think it will be toast toast and more toast for dinner.

DH seems to have taken over the cooking for this week, bless 'im, and he's making a gorgeous beef lasagne from scratch, with a lettuce salad and crusty garlic bread. . .

Roast topside, roast potatoes, mashed potatoes, carrots, paprika baked cauliflower, broccoli, Yorkshire puds, gravy.

Meant to cook it yesterday but accidentally got too drunk too manage it.

Red peppers stuffed with cod & mashed potato, cooked in a tomato sauce with small pasta, all cooked together, so very easy.
Almond tart for pudding.

Vegetable lasagne and salad. I didn't think the lasagne was very good actually.

Pudding is apple and blackberry sponge with clotted cream.

We had a BBQ last night with salads that DD made. I had coated the steak for DH and I in Jamaican Jerk seasoning from the back of the cupboard, which was actually very nice! DD had made potato salad, pasta pesto salad, sweetcorn/feta/onion/tomato salad, tomato and mozzarella salad, and a sweet potato salad (which involved bacon lardons, pepper, spring onion, grated ginger, chilli, lime juice and some other stuff, but was actually very tasty!).

She had also made turkey and sweet potato burgers for herself (which was why there was spare sweet potato mash for the salad!) - which turned out very well also. She is NOT a fan of red meat.

For lunch, DD had also made coronation mayo egg sandwiches - like normal egg mayo mix, but the mayo had mango chutney and korma spice paste (and some other stuff) in it. Which was surprisingly tasty. I think she's enjoying using Mr Google and having a certain amount of free rein in the kitchen!

Tonight, we are having leek and black pepper sausages in tomato sauce with pasta.

DD will make a chilli tomorrow with turkey mince.
