What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Air fryer reheated chips a crunchy success

40somethingJBJ · 30/04/2020 10:07

Last night we had lasagne from the freezer. I fell downstairs yesterday and have done something to my ankle, so wasn’t up to standing cooking. I’m so glad I froze leftovers!

Tonight, we’re having bbq marinated pork steaks, roasted veg and couscous.

It's turned chilly again so I'm doing a chicken casserole tonight with mash.

We have just had the most wonderful lunch. I roasted off a chook, and we had hot roast chicken sandwiches, made with lovely fresh white bread and mayo. I am having a wee white waine with it.

For tea, with the way the weather has gone, I have reversed the idea to have left over chicken with salad, new potatoes, asparagus and baby carrots, and instead we're having maccy cheese.

Which is a good thing, because there's not a whole lot of chook left over. . .

Youngest DD mused over her sandwich, 'we really are a food obsessed family, aren't we'. . .

Oh my yes. For at least three generations. . .

I did a slow cooker roast chicken on Tuesday; last night was cold chicken, jacket potatoes and coleslaw; tonight will be paella with chicken, prawns and chorizo. Tomorrow, leftover paella!

formerbabe · 30/04/2020 18:22

I made a delicious pasta for dinner night...baked salmon flaked into tagliette with asparagus, roasted cherry tomatoes and toasted pine nuts...drizzled with olive oil and a squeeze of lemon.

Tonight I think I'm going to do fajitas style chicken with rice, avocado and sour cream.

Chocolatear · 30/04/2020 18:23

Chicken katsu curry, rice and cucumber salad.

TwoZeroTwoZero · 30/04/2020 18:47

Butter chicken, but with vegan chicken pieces, served with rice.

Tomorrow we're ordering a takeaway.

P1nkHeartLovesCake · 30/04/2020 18:59

Roast chicken, roast potatoes. Parsnips, stuffing, broccoli and gravy

Then flapjack and whipped double cream

HelenaJustina · 30/04/2020 19:44

DC had chicken salad and couscous. My whole roasted cauliflower with ras el hanout is starting to smell amazing. @YDYtrue p.90....

P1nkHeartLovesCake · 01/05/2020 14:48

Will do an easy veg pasta tonight. I will make a basic tomato sauce and stir in some Harrisa and add the contents of the veg draw (peppers, onion, mushrooms, corn) with penne and grated Parmesan

It's Friday, so our weekly takeaway treat night. There are a surprising amount of takeaways still open locally, and a number of restaurants are now doing takeaway. But the MD of a local chain is a neighbour, and says that while initially it was all a bit mad and disorganised, business midweek is way way down (I was going to say completely dead, but that may be in bad taste, but it's because everyone is at home to cook for themselves) but that Trhusday, Friday and Saturday nights are all really really busy (as everyone wants a break once a week). So a lot of them are now only opening Th, F and Sat, and not bothering the rest of the week.

mbosnz · 01/05/2020 15:45

Darned good question.

It's fakeaway takeaway Friday. One daughter has suggested pizza, the other, burgers, both assuming they will be done on the bbq. Which obviously isn't going to happen. . . I'm thinking home-made fish and chips.

And of course, wine. Wine could be the entree. . .

Pita with tuna, hummous, salad, olives and capers.
Satsumas and Greek yoghurt with honey for fathers.

iklboo · 01/05/2020 15:48

DS(14) has made cheese & onion quiche. We're having it with baby new potatoes and salad.

Louisiana burgers from the local butcher tonight. 1/4 lb beef with Cajun herbs and spices. Very juicy and flavour some and only 90p each.

drspouse · 01/05/2020 17:52

Indian takeaway, it's our anniversary!

mbosnz · 01/05/2020 18:00

Happy Anniversary drspouse!

iklboo · 01/05/2020 19:47

Happy anniversary @drspouse. Here's DS's quiche. There's not much left. Grin

What’s for dinner?
mbosnz · 01/05/2020 20:07

Oh my. That quiche looks gorgeous!

GreenTeaMug · 02/05/2020 06:55

I had a pork schnitzel sandwich followed by an entire pack of wine gums.

Tonight is a chickpea korma with rice.

HelenaJustina · 02/05/2020 09:04

Last night was pitta, Moroccan hummus and crudités. DC had left over lasagne as they were hangry and it was in the fridge and I got it on the table within 10 minutes of getting in from work! Hangry children and a long day also meant that I drank gin...

Today am going to make a mixed bean casserole which we will probably eat altogether this evening.

GreenTeaMug · 02/05/2020 14:08

I have decided against chickpea korma and am going witn baked fish and vegetables

mbosnz · 02/05/2020 14:40

Chicken mussaman curry with rice here.
