Just leave it to age for a while, that'll make it stronger. Or if you're in a hurry, buy Camembert 😅

Brie de Melun is stronger than the more common Brie de Meaux. I don't know any UK chains that sell it, independent cheese shops do, and you can get it online. Brie de Montereau is also strong, but even less available.

I am all about stilton on digestive biscuits, but I will try your ginger biscuit/cheddar mash-up. Are we talking sugary gingernuts or Nairns’ vaguely wholesome ginger oatcakes? Sharp cheddar, or mild? I am looking BC-level specificity on definitions here.

I am not the origin of the cheddar - ginger combo and have never tried it, but to my mind it sounds like a sweet ginger nut style biscuit and a very mature cheddar would be the best.

All cheese is good cheese (apart from Gouda and Edam). I eat at least 30 grammes per day to push up my bone density. Love it with home made vinigarry pickled onions, raw onions or mustard pickle. I eat cheese with bread, on toast or with water biscuits. I love cheese.

I'm going to contribute to filling this thread by just saying what an incredible group of people you are.

I don't talk about GI issues at work much, if at all..and when I do it is with my breath held, on my tiptoes and absolutely fact based, oh and only because someone is about to do something utterly bonkers that I can't not speak.

I try to talk to my kids about the need for them to consider facts, evidence and to think for themselves. They wobble...as they know that what I'm saying is true..but they are so conditioned to "be kind" and of course have friends identifying as trans so are defensive of anything they see as a "threat".

So when I'm with you lot, here..where I lurk in awe at the intellectual debates, the rigorous argument, the breadth of expertise, the Gilbert and Sullivan earworm...this is the only place I feel safe.

So thank you all for being here. See you on the next thread

I speak up less than I'd like to (but it's gradually increasing). The latest thing I couldn't let pass was the suggestion - last week - that we might like to sign and promote and open letter ....

Just bog standard McVities, or even supermarket own brand. Strong cheddar because that's the type I like.
