Eating more fruit and veg

Starting this to keep me accountable!
I am lazy with fruit/veg, I like it and eat most stuff if it's put in front of me
Decided rather than a "diet" I want to up my fruit, veg and salad and that way naturally cut down on the processed carbs etc as hopefully I should be fuller from the more low calorie/high volume stuff

Tonight's meal
Cheese (I did weigh 30g as well, cheese is life), mushroom omelette with salad
White chocolate protein yoghurt with strawberries (I only eat them when British ones are out and these were delicious)

I've done 8 months in a strict paleo diet but I really get sloppy on my veg intake. This week I've been deliberately adding an extra serving of veg to my meals once plated up, and it definitely makes me think about my veg intake. I try not to eat too much fruit so really should increase the veg !

@thenewaveragebear1983 that's what I've started doing as well. Mostly the steam type frozen veg
Although I did get a Hmm look the other day as I had my tuna jacket potato with salad, and then tipped a bag of veg on it too Grin

I like Deliciously Ella for good veggie lunch ideas - she’s got lots that are basically a big traybake of roast veggies/beans with a tasty dressing- yum!
My favourite lunch just now is a big plate of salad with kale, a wee bit raw broccoli, tomatoes cucumbers etc, with tahini dressing. I have it with tofu (vegan) but I’m sure you could stick cheese or chicken or whatever on there.

I always make a big vegetable soup and keep it in 1 portion sizes in the fridge. Also in the evenings if the meal is veg light, I try (and often fail) to start the meal with a separate salad. Pasta dishes are always bulked out with plenty of veg too, eg veg or tomatoes in the sauce plus a whole cooked broccoli head in the finished meal.

Yeah pasta is one thing I do put loads in! I'm quite good at adding it to things I'm making so beef stew will have celery, onion, carrots, mushrooms etc but then I forget to add stuff on the side Grin
I'm aiming for volume so lots of bulky food to keep me full without adding calories

That's what I'm trying to do really, more protein and veg, less carbs without going mega strict
At this rate I'm going to need to shop mid week for more salad though Grin

Hahaha aslong as it's healthy! Have you seen the keto snacks to? My son used to be on the keto diet but the cookies are so easy to make, filling and delicious with 0 carb!!! Xx

I'm going on the 21 days to form a habit or whatever it is. I've lost weight before either low carb or calorie counting but I'm hoping just by having the salad and veg I naturally fill up on that and it changes my eating
Although so far I am full of spots and craving chocolate! Did have a hot chocolate tonight which hit the spot

B. pastries with a mixture of blueberries, redcurrants and strawberries.

S. banana

L. soup made in a soup maker with leeks, celeriac, celery, carrots, small potato all bunged in with some parsley and chervil. Wholemeal bread and cheese.

S. apple

D. sausages with roast veg: onions, parsnips, garlic, carrots.

Tomorrow will be the same except for D. which will be knuckle of bacon, onion, leeks, carrot, cabbage, pots.

As the weather gets warmer, we don't eat as much soup for lunch but eat massive salads instead with proteins such as chicken, prawns, ham, tuna.

Plan for tomorrow is

B - boiled eggs and marmite rice cakes (I do a happy dance when I eat this as I enjoy it so much) BlushGrin
L - roast chicken salad thins with some added cucumber sticks
Snack - banana or apple
T - um.. feta and bacon salad maybe. Raspberries as they need eating

Need to shop again as I've eaten nearly all the salad! Going to do some pulled pork to have with salad and coleslaw for a change and get some kale and broccoli to roast

One of my favourites is carne asada, which is a Mexican style lean marinaded steak that we slice thinly and have with chopped vegetables like tomato, onion, lettuce or rocket, avocado etc. my husband likes to add black beans and he makes a Mexican bowl using the molds you can get for tortillas, baked in the oven. I like it without the bowl.

I find it a good way to eat lots of vegetables, as you can chop up lots of things like peppers or add corn etc. instead of an oily dressing I use salsa and lime juice. The carne asada is a lean protein source but very tasty. I use flank steak and marinate it the day before.
