Starting this to keep me accountable!
I am lazy with fruit/veg, I like it and eat most stuff if it's put in front of me
Decided rather than a "diet" I want to up my fruit, veg and salad and that way naturally cut down on the processed carbs etc as hopefully I should be fuller from the more low calorie/high volume stuff

Tonight's meal
Cheese (I did weigh 30g as well, cheese is life), mushroom omelette with salad
White chocolate protein yoghurt with strawberries (I only eat them when British ones are out and these were delicious)

Highly recommend 10 A Day the Easy Way by James Wong, it changed my diet in a really positive way. I eat much more fruit and veg these days and feel much better for it.

I'm getting very bored of salad, I eat it twice maybe three times a day- lettuce, cucumber (which I force down but I do eat), tomato, sugar snap. I don't tolerate raw peppers well so rarely add them and I don't eat corn. What else can I put in? I love beetroot but forget to buy it often , I eat avocado but that's a fat not a vegetable really....

Every now and then I dust off an old vegetable only cook book and amaze myself with my veggies skills... then I fizzle out. It's strange because I actually love veg and thoroughly enjoy eating it and it's often my favourite part of a meal.

I hate salad so I don't really eat it, aside from iceberg lettuce, tomatoes and peppers haha. But adding fruit and veg to every meal made such a big difference to my weight loss, and tastes good too! Even small tweaks like replacing one bit of toast with boiled eggs with asparagus (surprisingly nice), fruit on porridge/yoghurt, lots of stir frys etc.

Have you guys tried darker leaves like spinach, cress, rocket? They sell them mixed and it's a game changer for salads compared to boring lettuce types. I have salads for lunch and found theese to be the best. And then I just usually crate a chaos on top of it😂

Simple toppings I like
-Chickpea (they even sell single portion cans), finely chopped onion, cucumber, tomato, bell pepper, pomegranate molasses, feta, cracked pepper, parsley.
-Gherkins, cucumber, sardines, fried onion (i have this one from asda prymat.pl/produkty/inne/cebulka-smazona ), cracked pepper, chili flakes
-Prawns, raddishes, cucumber, hoison, pickled ginger, spring onion

  • hardboiled egg, cucumber, bell pepper, spring onion, quark, fresh chives, salt, black pepper
  • cucumber, tomato, red onion, grated cheddar, chopped ham, little bit of mustard, black pepper. Top with poached egg (the egg yolk makes dressing)

You can throw avocado or olives (not a fan of either) on it if you like them 😁

@SchrodingersImmigrant oh yes! I much prefer the bags of mixed baby leaf and then usually add some spinach too
I love eggs in salad but I eat two every morning for breakfast Grin

I'll have a look. Need to go to the supermarket tomorrow as I bought two bags of salad and two bags of spinach on Saturday and er, it's all gone

I keep my leaves in a box with bit of paper towel. They last longer like that.

Yes this is such a good tip! I do like romaine lettuce actually, but find it goes off quickly. Someone else mentioned this hack and apparently works wonders, will have to try it.

So, inspired by this thread I had chicken thighs cooked in spices and pineapple juice, with cauliflower rice for dinner and into my rice I added spring onions and orange pepper, and ate the rest of the pineapple for pudding. Easily 3/4 of my plate was veg!

Bit light on the veg today

Lunch had gherkins (as ever!) and some salad and I've had a banana. Food shop tomorrow

Ordered from a veggie takeaway for tonight which has great reviews and I figured better than pizza Grin

I think this is a really good way of becoming healthier.
B: Strawberries, pear & multi seed toast
L: Lettuce, beetroot, olives, couscous and a duck ball. Apple
D: Hairy Bikers Spanish Chicken traybake (contained onion, pepper & tomatoes) with broccoli
