Starting this to keep me accountable!
I am lazy with fruit/veg, I like it and eat most stuff if it's put in front of me
Decided rather than a "diet" I want to up my fruit, veg and salad and that way naturally cut down on the processed carbs etc as hopefully I should be fuller from the more low calorie/high volume stuff

Tonight's meal
Cheese (I did weigh 30g as well, cheese is life), mushroom omelette with salad
White chocolate protein yoghurt with strawberries (I only eat them when British ones are out and these were delicious)

Do not buy Lidl frozen blueberries. They are the size of petit pois and full of seeds.

Tea - stir fry veg (the ready chopped stuff), onion, mushrooms, spinach, half a pack of rice, an egg and teriyaki sauce
Just taken some strawberries out the fridge to have later (I hate cold strawberries!)

I had a very low volume fruit & veg day yesterday as started with a mild hangover, then had my Covid vaccine. Back with a bang this morning as have had two portions for breakfast 😄!

I need to food shop so a bit low here!
Plan is crumpets for lunch (I had a wonky bread box delivered and they need using up)
Tea - something out the freezer, hoping there's a cottage pie in there (already has veg in, will add a steam bag too)

Food shop plan. I'm doing all this on a budget so my shops look random but I plan massively to use stuff up! By budget I mean I try and stay under £40pw

Already have peppers and red onions for the chicken rice and salads
Wraps are from the wonky bread box as are the focaccia
Also have creme fraiche in for the garlic mushrooms and to make a ranch dressing

I'm not a vegan/vegetarian but I have the Deliciously Ella app and I have made tonnes of recipes from there. It's really great for increasing the number of different plant foods in your diet.

I'll often have vegan lunches at work (bean chilli, vegetable soup with spelt, Mediterranean vegetable quinoa or roasted vegetables with pearl barley) and more meaty dinners at home with DH who is a committed carnivore.

One of our favourites is Cajun Dirty Rice from Pinch of Nom's blog. It's rammed with different veggies and, when made with turkey breast mince, is about as low fat as you can get. Really filling too.

L: Poached egg on spinach on toast
D: Roast chicken, potatoes, cavolo nero, carrots & peas

L: Greek salad, apple
D: Moroccan roast chicken with root veg couscous. Just did some roast veg in the oven with ras al hanout then added couscous & water at the end; then added some cold roast chicken.

Been food shopping!
Cooked chicken thighs in the slow cooker and shredded them to add to meals
Wonky strawberries (British) were £1 so I got a few of those and the raspberries as they looked good
Stir fry veg for my fried rice (because I seem to be living off that)
And finally got some marmite rice cakes Grin so normality is resumed for my breakfast

In the last few days

Breakfasts: either orange or strawberries with toast
Lunches: Ham salad sandwich, scrambled eggs & tomato, carrot & hummus pitta
Dinners: curry, chilli & homemade guacamole, fish with green beans and a frozen roast med veg mix - that last one was really nice.
