Starting this to keep me accountable!
I am lazy with fruit/veg, I like it and eat most stuff if it's put in front of me
Decided rather than a "diet" I want to up my fruit, veg and salad and that way naturally cut down on the processed carbs etc as hopefully I should be fuller from the more low calorie/high volume stuff

Tonight's meal
Cheese (I did weigh 30g as well, cheese is life), mushroom omelette with salad
White chocolate protein yoghurt with strawberries (I only eat them when British ones are out and these were delicious)

They weren't as crispy as the recipe but still tasted delicious so that's one I will make again. Very quick too, I made the salad as they were cooking

D: Vegan Thai curry & rice (had 4 veg in it, but only 3 of my 5 a day); homemade apple crumble

This is my second meat free Monday. It’s quite nice to eat vegetarian once a week.

B - 2 boiled eggs, marmite rice cakes
L - ham salad thin with gherkins as usual, bag of baked crisps, mini choc bar
Snack will be an apple or banana
Tea - doing chicken fried rice with spinach, mushrooms, pepper, onion and tomatoes

Slightly low veg/fruit today as it's the day before food shop

B - marmite breakfast seed things and cream cheese
L - ham thin, baked crisps, yoghurt
Snack - banana and protein shake
T - pasta meatballs with tomatoes, onion, sweetcorn

Plans for next week are
Pulled pork and coleslaw and salad
Chicken sausage veg fried rice
Feta salad

I got some stir fry veg which I thought I could add to the fried rice dish I've been making
And British strawberries 😍 because I love them plus loads of salad etc

L: avocado, cucumber and crab toast
D: homemade sweet & sour chicken (contained carrot, red pepper, onion, pineapple), bread
And a bad day for snacks as also had carrot cake and 4 chocolate ginger biscuits!

Really need to start mixing up my breakfasts.

Also trying to work on drinking more water now as I tend to drink too much tea
Got a 600ml bottle I'm filling up twice a day on top of the too many cups of tea
2lbs is a very small drop in the ocean! I'm 5ft 10 and a size 16 Blush

My weakness were crisps, like proper weakness. I made courgette ones intead in the oven few times. It's actually nice!
Except that one time when I put oven too high and out came out black slices of courgette coal😂

I started doing this at the beginning of January because dh is ill and I do a lot for him so I wasn’t eating as much f&v as I should so I bought a soup maker & it’s really helped. I get through a bag of broccoli a week on my own in soups & I’m addicted to pea and mint soup. I use the kallo stock cubes because their organic. Don’t anyone buy the morphy Richards ones, I’ve had two pack up on me & John Lewis are getting suspicious.

Dh is a f&v refuser so I do him banana with sugar free custard mix or peaches with soya cream if he wants a pudding & in the day he has mushrooms on the side with breakfast, red onion (higher antioxidants) in salads & I only buy Italian plum tomatoes now as they taste way better. He was already good at using evoo on salads but he’s found a favourite brand I’m not allowed to run out of 🤨. He had spam in the cupboard when I met him & no fruit bowl.

When I’m cooking him a curry or mince based dish I throw a handful of porridge oats in as their packed with antioxidants & he can’t tell the difference or he would’ve complained about it.

I don’t see a massive problem with tea though, it’s got minerals in it & tannins & antioxidants. The decaf versions aren’t awful if the caffeine intakes getting a bit high.

I hate the phrase “eat the rainbow” but it’s true. I buy spring greens, carrots & celery very cheaply then freeze chopped up because I think it’s the prep that puts you off especially after a day at work.

I’ve started using frozen blueberries in porridge, they don’t go mushy at all. All the supermarkets charge about the same for them, Lidl is very cheap on dried fruit at the moment.

It’s ok to slip up, I ate a pack of Lidl knock off hob nobs yesterday but I had normal food for dinner. I’m sure my pancreas was not impressed with me but it’s a one off.

I really like frozen raspberries and they're cheaper so that's a win!

Tea probably my fried rice mix thing - packet rice, eggs, and as much veg as I can get in plus teriyaki sauce
