Change of plan, I set out for the gym but was feeling a bit poorly anyway so I guess my heart wasn't even in to going. I drove there but there was nowhere to park. Usually, I'd turn around and check for a second time but the road was really busy as buses are on diversion (there was a body discovered in the canal close by), so I thought I'd just come home instead. I do feel sick, headachy and stomach cramps so perhaps I shouldn't have even bothered setting out for the gym tonight?
Well, as promised, heres the recipe for meatballs.
Meatballs In Tomato Sauce

Ingredients
4 garlic cloves
511g extra lean pork mince
1 tsp ground cumin
2 tsp ground cinnamon (personally, I don't think you need this much but feel free to alter it to your own taste)
1 onion
1 carrot
2 celery sticks
fry light
1 tsp artificial sweetener
small handful of parsley
1: Peel and crush 3 of the garlic cloves, place in a bowl with the mince, cumin and cinnamon and using your fingers, mix until well combined. Cover and chill for 1 hour to allow the flavours to develop.
2: Meanwhile, peel and finely chop the onion and carrot. Peel and crush the reamining garlic, finely chop the celery. Place in a pan sprayed with fry light and fry for 5-6 minutes. Stir in the passata and sweetener, bring to the boil, reduce heat, cover and simmer for 25-30 minutes, stirring occasionally.
3: Shape the mince mixture into small meatballs. Cook half of the meatballs in a large frying pan sprayed with fry light for 2-3 minutes on each side, or until cooked through. Drain on kitchen paper and repeat with the remaining meatballs. Add the meatballs to the sauce and heat through. Chop the parsley, scatter over the meatballs and serve.
