Breakfast and lunch yesterday were an exact repeat of Tuesday
Dinner was broccoli, roasted tomatoes and macaroni, cauliflower and spinach cheese. I used the recipe in this months vegan food and living for the cheese sauce (half the turmeric and double the nooch for personal taste) and it was lovely 😊

KobaniDaughters · 24/09/2021 06:36

Went out for brunch to VEGAN lauderee!! Shared a benedict with these crazy vegan eggs, and a chocolate snd normal croissant and a palmier! Worth it….

S: blueberries, papaya
D: Moroccan carrot, orange and cashew salad, Thai raw cabbage and broccoli salad, beetroot and parsnips roasted in sweet miso with hazelnuts. A yuzu chocolate macaroon. Mango

PartTimeDomesticGoddess · 24/09/2021 11:02

That sounds amazing @KobaniDaughters! I had to look up what a lauderee is though 😳

Yesterday was
B: kiwi, soft dried prunes, trek peanut protein bar
L: mixed veg curries frozen as leftovers
S: fresh raspberries
Dinner was another Meera Sodha recipe from the guardian a couple of weeks ago, link below. It was really tasty and I'll make it again, but will adjust the butternut weight to match the tomato weight next time. I also subbed haricot beans for borlotti as that was what I had. I had this with a warm seeded bread roll (buttered, natch!)
After dinner I had a couple of Jaffa cakes and vegan rolos. I bought them from Meal UK. I'd say they were quite nice but the jelly wasn't orangey enough (or maybe there could have been more of it))

L: artichoke and lemon tahini sauce, cucumbers, orange
D: went to my favourite pizza place: burrata salad (so frigging amazing!), cauliflower and roasted chickpeas pizza, eggplant Parmesan

@PartTimeDomesticGoddess that recipe looks delicious, I'll give that a go.

B: porridge with kiwi, raspberries and blackberries with flaxseeds
L:roasted aubergine, courgette, red onion and garlic with turmeric quinoa and pine nuts.
D: jerk cauliflower with rice and peas and red cabbage coleslaw.
S: nuts, seeds, fruit and chocolate

Youcancallmeval · 25/09/2021 09:36

I need to go booze free, my tolerance is minimal but my perseverance is great, so a glass turns into 3 and I feel dreadful. I had a hysterectomy a few weeks ago and alcohol is one of things they have told me to stay away from, so now I have another reason to do so.
Yesterday, no breakfast, toast with avocado for lunch, Thai for dinner (tempura veg, green curry with tofu).
Today, no idea yet for lunch as food delivery en route so my options will be many. Dinner, aubergine tamarind curry, not tried it before.

PartTimeDomesticGoddess · 26/09/2021 11:29

Morning folks 😊

Friday
B: overnight oats with blueberries, kiwi and seeds
L: small portion of leftover squash and tomato traybake with a slice of buttered bread
D: pizza and lots of salad (including a green bean and tomato salad with coriander dressing and a Waldorf salad, both of which my mum made and were delicious 😋)

Yesterday
B: kiwi, big slice of my dad's freshly baked sourdough with marmalade
Lunch with my sister (can you tell we were visiting family 😂) - a fig and some cucumber from her garden, eaten with her hm bread and hummus
Dinner when we got home was a nut roast portion from the freezer with mashed sweet potato, carrots and from my dad's garden corn on the cob, runner beans, Swiss chard and roasted squash. All with lots of gravy and cranberry sauce naturally

KobaniDaughters · 26/09/2021 17:16

Aw that sounds like a lovely foodie trip @PartTimeDomesticGoddess

L: artichoke with lemon and tahini sauce, blueberries and raspberries
S: sliced cucumbers with vegan Boursin (it was ok, nothing to write home about)

KobaniDaughters · 27/09/2021 15:26

Ha me too @PartTimeDomesticGoddess though it admittedly took a long time for my mum to stop seeing my move to veganism as an affront to her personally - we’re both feeders and my brother is a pescatarian erring towards vegetarian. Tried veganism but I think went cold Turkey too quickly for him - but mum doesn’t still sometimes openly grieve not being able to give us her staple mum-comfort-food we had growing up!

L: leftover ginger carrot dressed shiitake, spinach and spaghetti squash
D: shepherdless pie, steamed broccoli, apple crumble (DS made the apple crumble all by himself and it was delicious!)

Just joined the thread (was on a similar one a few years back but fell off). I've been a vegetarian for about 40 years, never quite full time vegan as I haven't been fussy about having the odd egg if it happens to be used in a cake or splash of dairy milk in a hot drink in the past but have been purely vegan of late. I also follow a migraine diet, so some tasty vegan seasonings such as noosh are out for me.

My H is a meat eater - he has just gone low carb and is IF. I have adult DC (5), 3 who still live at home - my dd's have recently switched to vegan from vegetarian so we are buying and trying out Vegan milks again and looking for vegan products both accidental and targetted (Nairn's chocolate chip oat biscuits and Boulangere vegan croissants have been a hit with my DD's) and my son is still veggie (he has butter on toast/on potatoes, loves shortbread).

Your recent posted "fakes" sound good e.g. the LM duck and feta (mentioned by PartTimeDomesticGoddess). I've tended to steer away from "fakes" as there have been so many truly awful products I've purchased over the years but the market looks like it has exploded lately. Really interested in seeing what everyone eats and getting some new inspiration and ideas.

Kolbani the bitchin sauce sounds lovely. I admire you semi fasting. I have no willpower whatsoever - hence my expanding girth!

quinin not heard of mushroom coffee before, so looked it up - sounds interesting. Clove porridge sounds great (I love cloves)- do you just add ground clove into the oats at the end of cooking ?
KobaniDaughters were the sausages good? trying gradually to get H over to the V side, sausages are one of his last hold outs.
PartTimeDomesticGoddess like the beetroot ideas - I tend to avoid them as I can't use up a whole bunch before they get wrinkled and they are so messy but I do like their earthy taste.
