Had a snacky day while cooking and taste testing for a friend who has a newborn and 4 teeth extractions!

Hummus, cucumber, almond banana muffin, sweet potato and chickpea stew, falafel, green beans

@SapatSea - I warm the cloves first in coconut oil, then add the oats and the milk. I love the idea of blitzing the silken with herbs to make a sauce.

B: Clove and cardamom porridge with flaxseed, walnuts, almonds, blueberries, blackberries and kiwi.
L: a mix of left overs - Brazilian black bean stew with quinoa and roasted veg & broccoli.
D: leeks, onions, garlic, cavolo nero, broccoli, spices, pumpkin and sunflower seeds.
S: HM protein balls, walnuts.

@SapatSea the issue with the fakes is it's such a matter of taste that trial and error is the only way. I dislike food waste, which is downside if I really don't like things
The best cheeses for me are usually the expensive artisanal or homemade nut based ones. Nooch will be key in some of them though, which wouldn't work for you. The ones I like are sainsburys own fake feta (violife is ok but the texture isn't right for me), oatly or violife cream cheese, follow your heart smoked Gouda slices (usually in a bun with a burger). I also buy violife grated cheddar because DD18 eats it. I was intrigued by a recent social media post about mixing it with Mayo to make cheese on toast and am a bit shabby this morning so tried it. I think I used too much Mayo but I'm not sure I would bother again.
Other subs that I like are moving mountain (expensive but their sausage patty is a fab McMuffin sub). I like their meatballs and fish fingers too but haven't tried their sausages - that would be what I'd get your DH to try based on the others. We mostly eat the Richmond ones as they're the ones that DD15 likes (I hated Richmond meat sausages but don't mind these, I also like Sainsburys shroomdog ones. The LM fake duck is great, and I like the Vivera bacon pieces.
As for beetroot- I love the earthy taste but rarely do them myself as the faff puts me off. I always buy the small vacuum packs, and I'm the only one who eats it most of the time so it often appears 3 days on the trot lol. I just eat it with a sprinkle of salt and pepper as a side or snack

L: spinach and mushroom soup with pine nuts and 2 slices of buttered bread
D: sticky rice, roasted tenderstem and Thai red curry (green beans, sweet potato, red pepper, shredded savoy and fried tofu)
S: chocolate chip cookie (Bosh recipe)

B: kiwi, plums, grilled violife/Mayo and tomato slices on one slice of toast, half a slice of toast with sliced tomato
L: 2 crumpets with marmite and avocado, Kit Kat
D: Corn on the cob, runner beans, steamed cabbage, buttery leeks and peas with gravy. I did cook a pie but… I saw fray bentos now do a vegan pie and DH said he used to like Fray bentos (would probably have been more than 30 years since he’d eaten one to be fair). So I bought a couple out of curiosity. Vile. You know what they say about curiosity!

PartTimeDomesticGoddess Grin I can imagine the Fray Bentos would be vile! I hate food waste too but sometimes you have to pay out a bit to learn what you like - "school fees."

Thank you so much for all your advice about "fakes". I agree it is a bit personal. I'm going to get the Richmond sausages (thanks, didn't realise they did a vegan one) for DS as he wants to get off the quorn ones but hasn't liked the LM or Cauldron ones. I think he'd like the texture of the Richmond ones. The Feta sub will come in handy. I'd like to convert H as I'm thoroughly sick after all these years of arguing over keeping seperate dedicated use pans, spaces in fridges/freezer and just having to look at, smell and deal with his meat and the complaints from the DC. I'd forgotten about vacuum packed beets (I don't like the vinegared ones in tubs).

quinin Thanks for the clove porridge idea. I think I'll try it tomorrow for Breakfast. I have some plums that aren't ripening , that I'm going to bake - so think they'd pair well.

B: Hot chocolate
L: Nutburger and salad
D: Sunflower seed crusted tofu, celeriac puree, steamed shredded cavol nero and sweetheart cabbage. Lemon, garlic and parsley gremolata.

S: Roasted nuts. Skipping lunch as busy and not hungry after porridge

D: Sort of Succotash - edamame, griddled corn , courgette, green pepper, onion, garlic, pinch of smoked paprika, spring onion and chopped tomato, lemon juice garnish, basil and parsley. Might have some cajun spiced tofu with it.

Clove porridge sounds amazing! As soon as the weather cools down I’m def giving that a go - would a touch of cardamom work with it too do we think? And maybe dates

Cardamom works with most things in my world @KobaniDaughters.

D: sumac quinoa with aubergine and a funny looking yellow squash, broad beans and peas.

Wednesday
B: overnight oats with kiwi, figs and seeds

Dinner was a salad box from the vegan cafe in town at a friends house (she lives closer to town than me so it’s a delivery option from there!) It had salad leaves, roasted veg, balsamic mushrooms, hummus, avocado, seeds and a few falafel. We also order garlic bread and chips, so I had a piece of garlic bread and a few chips too then a couple of chocolate digestives and some Ritter marzipan when I got home

Thursday
B: protein shake, kiwi, figs
L: Bol tomato, red pepper and lentil soup with beetroot and a marmite sandwich
D: 2 Richmond sausages, hm Yorkshire puddings, cabbage, carrots, peas, broccoli and Swiss chard with gravy

The Yorkshire’s were based on an olive magazine recipe my friend gave me. Happy to share it when I get chance if anyone is interested. I can’t say they’re exactly the same as a regular Yorkshire but DD18 and I really liked them (and DD15 had a bite and scored it 6.5 out of 10 😂)

Brunch: went to a new vegan bakery with a friend and we shared a jalepeno, olive, cheese and zatar croissant and a chocolate and almond croissant
Dinner: mushroom miso soup, rosemary almonds, sugar snap peas and garlic spread, blueberries

KobaniDaughters were your persimmons lovely and ripe? Really hard to find where I live. Mmm.
The younger members of the family tried the Richmond Sausages:
DS(18) who is very unadventurous in his eating thinks they are a bit "spicy" (??) but DDs (20, 21) like them.

I have a balance disorder which has flared up the past few days so haven't checked in here or felt much like eating.
I managed some steamed rice, edamame and rainbow chard for dinner last night and am making a pot of vegetable and haricot bean stew/soup to have today.

@SapatSea sorry you've not been feeling well. That's rubbish. Hope you feel better soon. My DS feels every thing is 'spicy' I made bean burgers out of carrots and black beans that were 'too spicy' apparently!

B: sourdough toast with olive oil and oregano
L: Chickpea salad with cucumbers, red peppers, mixed olives, broccoli, cauliflower and an olive oil and lemon dressing. Was delicious.
D: miso aubergine with pomegranate & walnut brown rice & cavolo nero.

Hello my lovelies I'm back ( very eventful and sad trip) One of our GD's commited suicide, you can imagine something of how we feel (sorry to put a downer on the thread) and for being away from it for soo long.

Welcome to the newbies and how are the ladies in waiting doing?

Ref. comfort foods; After soaking I cook whole rice for a long time on the hob. Then cook in plant milk and sweetener (whichever you like, I use molasses ) add ground spices (plenty of the ones you like too) you can put it in the oven or cook on the stove slowly.

Also my almond smoothie is very comforting, we need it. Sad Soak chopped dates over night add ground linseeds and almonds, with almond milk and a whole chopped lemon, with whichever seasonal fruits you've got. Then blend,

Mac n 'cheese' .

Saturday

L: lettuce, pea and mint soup with buttered bread
S: frys chocolate cream
Friends over for a Greek feast, which I enjoyed cooking. Spanakopita, mousakka, flatbreads, roasted courgettes, cauliflower and Romano peppers, Greek salad, green salad, lemon and coriander hummus, baba ganoush and olives. And an orange and lemon semolina cake

D: sage and squash lentil stew, mashed potato and red cabbage

In the fridge / freezer: 6 portions of lentil shepherds pie, another night's worth of red cabbage, 6 portions of squash and tomato casserole.
