I made some nice little vegan chox with low sugar choc. ;it's a bit too low sugar for me! I wanted the rice milk choc. but there's none in the shop ( and that's too high in sugar for me! ) so I just melted some of the 85% cocoa choc , added almond milk and maple syrup plus some almond butter for a fudgy texture. Put into little paper cases then in the fridge et voila! I've added some marzipan topping too. Made with ground almonds and maple syrup. Lovely [bugrin]

B. Fresh Easter smoothie with soaked dates/apple/lemon/ ground almonds/linseed/and almond milk.
L. Courgette,shallot salad, pumpernickel and chestnut crackers with usual spreads. 2 litle Choc cakes. (see above)
S. Fruit plate first fresh strawberries, figs, almonds glass of apple and quince juice.

L. leftover pasta dish M\waved heated (mushrooms\onions garlic\courgettes) with extra herbs. Coffee tofu dessert and one of my choc/marzipans
S. 2 h/m Hot cross buns with molasses and dh bought some more chox.

Yesterday
B: porridge with raspberries and golden syrup
L: salad sandwich (lettuce, tomato, avocado and artichoke hearts)
Had friends round for dinner - nut roast, roast potatoes/parsnips/carrots/cauliflower, buttered leeks, peas and broccoli. With cranberry sauce and gravy (obvs). Pudding was Bosh chocolate fudge cake with elmlea

Finally back from our spring break trip, happy Easter - we did nothing religious or secular related I’m afraid

L: tomato and avocado salad
S: peanuts, cashews and cranberries
D: thai raw veg and tofu salad (also picked quite a lot on the bolognese I made for tomorrow), a fortune cookie brought back from China Town

So glad I have come across this thread!! I've had to cut out dairy as it's affecting my LB who is BF. I've taken it one step further and gone vegan but I've been struggling with what to eat!

TBH about Easter it's not as stressful as Xmas BUT because dh finishes Lent (though he's not religious in any other way!) it is a bit OTT with the chox and the booze! the 2 main things he gave up!! Well he is, I'm a lightweight!

I'm also glad because I'm off back to Blighty on Wed. and Off Line I was worrying there 'd be no one to carry on the great work !!!!!!

B. Special Easter smoothie, the thick almond milk smoothie with lots of added strawberries and some maple syrup.
L. 2 slices spelt bread and shallot salad with spreads. 2choc marzipans
Late lunch early supper, spinach/baked onions, carrots and marinaded tofu. The nicest non vegan ice cream cake ever. (there's a patisserie in the next village where the owner's son wins prizes for his originality (shame he;s not vegan) but he handmade a non dairy easter egg which I got !

Welcome home @KobaniDaughters. SF sounds fun. How did the house viewing go? Are you stood down from having everything in viewing state? Must be exhausting! 😂

Off again @ppeatfruit. I'll do my best to keep things going lol. Phase 1 of the teeth, which was placing of implants on both sides, seems to have gone well and I'm now back to my normal restricted eating while I wait for phase 2 which are crowns on some of my own teeth. It will be September earliest that I get the implant crowns. There was A LOT of soups/sandwiches/smoothies for a couple of weeks!

Hello to @RiaG91 😊 Please ask if there's anything you're looking to swap for a vegan alternative. Not an expert but can suggest things that I like in most cases.

Yesterday was

B: hot cross bun, toasted and buttered. Alpro cherry yogurt
L: sandwich (leftover nut roast, Mayo and cranberry sauce). Slice of simnel cake (recipe from domestic gothess)
D: jackfruit and black bean chilli, rice, Mexican sweetcorn and avocado with lots of fresh coriander
S: ginger nuts, popworks sweet and salty

We accepted an offer on the house today so keep your fingers crossed it all goes through, though it happens MUCH quicker in America so in theory all done by the end of May but we negotiated staying in the house an extra month. Going to a lovely couple who sent cover letters and photos of them with their dog and came to all 4 open houses so it’s a warm fuzzy feeling too

L: lentil soup, blueberries
S: kimchi, hazelnuts and dried persimmon, chai latte
D: bolognese sauce with Spinach and broccoli, oat yoghurt

Blimey that is some dental work Domestic Every Easter I fantasise about making a Simnel cake but it never seems to happen. Mum used to make one, it's my fave cake Grin Thanks for stepping up to the mark!

B. Finished strawberry smoothie with extra lemon juice. Walnuts
L. 2 slices spelt toast normal spreads with grated carrot\red onion
salad. Choc egg and choc almonds
Sn Pretzels and grated carrot. S. Steamed fennel and spinach.

I'm off tomorrow so I'll say bye bye everyone now. xx Back in a month or so

B: smoothie (frozen banana and cherries, soya milk and cherry Bakewell almond butter)
L: freezer portion of fried rice with chopped hazelnuts
D: harissa roasted veg (beetroot, cauliflower, aubergine and chickpeas) with a yogurt/tahini/lemon dressing
S: Simnel cake, cherry tomatoes, 3 marshmallows

Yes but honestly there’s such a lack of housing I’m getting a bit panicked and wondering if we need to look at more areas again….

D: made a southern style FEAST: bourbon slushies, “chicken” fried tofu, greens and facon, Smokey black eyed peas, cornbread, potato salad, peach cobbler and ice cream

Pub lunch - vegetable soup, bread roll, pub chips and a pint 😋
D: Dahl, rice, spiced roast beetroot and cauliflower, hm naan
S: sticky toffee pudding with custard, chipsticks

Today
B: tinned grapefruit, porridge with raspberries and maple syrup
L: braised lentils with carrot/beetroot/spring greens (with chermoula paste and yogurt)
D: sandwiches (tomato/marmite), Simnel cake
S: mini magnum

@PartTimeDomesticGoddess oh wow that must have been amazing seeing your brother! How long is he over for?

It was def a food is fuel weekend, I took some cashew yogurt and granola for breakfasts and a tin of lentil soup and some snacks, otherwise took what I could get in the horrible catered buffet (mainly salad and chickpeas!). I feel disgusting!

@KobaniDaughters - it was amazing to see him! It was a really short visit, he was with my folks for 2 nights but we were only there for 1 night. He's over on a business trip, so am just grateful that we were able to see him at all

Yesterday was

L: roast veggies/Dahl and a hm naan bread (leftovers from Saturday night)
S: Simnel cake
D: leek and pea risotto with pine nuts and nooch (fresh peas from the veg box and the pine nuts were copied from a hello fresh risotto recipe that I looked at for inspiration - will add pine nuts to risotto as standard in future)

yesterday went rapidly downhill:
B: cucumber and hummus
L: hummus and cabbage wrap
D: Cajun rice with black eyed peas (leftover from the other night)

then I sank almost a whole bottle of wine to myself and then ate a whole package of Chao cheese and a bowl of trail mix 😬
