Oh you're going back !!!!! Good luck with the sale. The news is not so good though in Blighty so you might get a cheaper house there! Do you have to put all your stuff in a Ship?

I luurve golden beetroot it sounds great! You can freeze it too if you wrap it carefully. I find that my lot eat with their eyes (if you see what I mean) everything needs to look good and they maybe don't like the look of golden beetroot because they're used to normal biege houmous!

B. Soaked o\n Apple prune,fig/lemon ground linseeds smoothie
L. HM onion soup with spelt toast. Choc.
S. Chestnut crackers with usual spreads and one of my HM vegan hot X buns. Yum even dh liked them a lot!

B: white bean hummus on rice cakes
L: tacos from the taco stand by DD’s therapist
D: went to a friend’s for dinner, had brown rice and a Japanese green stir fry, they all had salmon and did marinated tofu for me. Followed by apple crumble and soy ice cream

Room for a new one?

I've been vegan since 1st Jan primarily for health - and failing miserably at the latter part! Far too reliant on quick processed options currently. So here I am for some slightly healthier inspiration.

Today has been a good day.

Breakfast - peanut butter and banana on toast
Lunch - butternut squash and chickpea tagine with couscous and roasted veg
Dinner - "chicken" kiev, new potatoes and salad

Managed to survive the day without snacking which is unheard of

B. Yesterday's smoothie.
L. 2 slices spelt toast with pnut butter and yeast spread with lettuce,shallot salad. Hot X bun plus choc.
S h\m. Spinach\swiss chard curry and tofu yoghurt.

Thank you. I've been very good and meal planned and shopped accordingly for the next two weeks, so the only things I need to buy in addition are fruit/bread/vegetables.

Today is looking like...

B - porridge with banana and raisins
L - BLT with Richmond meat free bacon (this is a new one to me). If the child has a nap I may whizz up some low calorie veg based soup too
D - stir fry - noodles, tesco plant chef "chicken" pieces, lots of veg

I wish I could be the kind of person who was satisfied with a smoothie!

Oh mine are not not "normal' smoothies Grin the linseeds when they're ground give a lot of fibre so they fill me up! I also grind up almonds when I fancy, and am feeling rich! They really fill you up, they give a beautiful creaminess too!

It's also best for health to have fruit and nuts or seeds together it keeps the blood sugar at an even keel. I make enough to keep in the fridge for a day or 2. Other wise it's too much faff every day!

Sorry again for not being around much - photos got take of the house yesterday and it opens up this weekend so it’s looking squeaky clean and we’ve been eating out a LOT

Got takeaway on Tuesday from this place which I loved when I ate in with a friend but it wasn’t quite as good as I remembered, still delicious though and enough leftover for lunch yesterday. Then we went to our favourite ramen place last night but it’s SO HOT here at the moment so I forsook ramen for a variety of sides instead

B: lentil soup
L: leftover falafel, Moroccan carrots, sprouts and cauliflower
D: agadashi tofu, garlic edamame, vegetable roll, smashed pickles cucumber
S: cashews, peanuts and dried persimmon

Breakfast went wrong. My porridge escaped its container in the microwave at work so I had the apple and grapes brought with me to have with lunch

Lunch was an amazing Buddha bowl thing from the plant based deli opposite the office

Dinner is pasta with a tomato sauce and Richmond meat free meatballs

@OhRiRi that seems like a healthy day to me - also the Richmond sausages are amazing!

I have a problem with picking and snacking so while my meals are always healthy and my snacks seem like they are I don’t post quantities for a reason!!

B: avocado on crisp reads
L: avocado salad
D: went out with friends to an Italian and ordered ALL THE VEGATABLES (actually did, they were delicious, variations on grilled with lots of yummy olive oil etc) and an aperol spritz
S: cashews, peanuts, another crispbread

RiRi I'm an old person so if I don't eat healthily MOST of the time Grin I get reactions!

Your porridge problem reminded me of being on Eurostar ( always take a prepared lunch with me to England and back) This time it was my beetroot houmous which had escaped it's container in my bag, thank goodness for the masks because I could mop it all up with them! Then wash the bag out in the loos!

B. Finished smoothie with some almonds.
L. Spelt toast with yeast spread and pnut butter and steamed spinach .
S. h\m Chard curry with whole rice.

Kobani When eating with friends before veganism was almost mainstream I used to always 'just' eat the veg at friend's houses much to their bemusement. But they' re usually better than a chewy piece of carcase aren't they?

B. Soaked date\ginger\apples. ground linseeds and grapejuice\half water smoothie.
L. Made almond 'cream cheese' with garlic and herbs etc. dipped oat crackers into it before putting it in the fridge, 2pieces dark choc (annoyingly I put too much celery salt in the 'cheese' so I will have to compost it!).
SnS. 2 choc soya desserts, ryvitas with spreads. Half a pomelo.

Woke up late today as up half the night with a non sleeping child after finishing work at midnight 😴

Brunch - 2x wholemeal pittas filled with tofu scramble with mushrooms, tomatoes, peppers and onion

Dinner is chilli (made with soya mince but swapped out half for finely diced mushrooms in an attempt to be healthy/reduce calories) with jacket spud and salad.

If i need a top up later, which I will, I'm working from home till 8pm and all I want to do when wfh is eat!! I have some of the laughing cow triangles which I'm yet to try, crackers, cucumber and strawberries on standby.

Also marinating some tofu for tomorrow's lunch. Definitely a convert!

Poor you, are you a nurse? (i've forgotten being up with babies, now it's dh lighting the fire downstairs at 3am! He tries to be quiet ! ) Oh I don't know if you know that tofu doesn't absorb oil , so you can use it for frying but not for marinading.

B. Smoothie, walnuts.
L. Steamed cauli, with a little of my almond, herb 'cheese' and tamari
on toast. Choc tofu dessert
S. H/m Hot cross bun, 2 oatcakes with pnut butter and yeast spread.

I work in mental health, management these days rather than at the coal face, but if we're short I'll cover late shift.

B - toast x2 with marmite
L - stir fried veg and tofu (soy, chilli, garlic, lime)
D - chilli & rice
S - fruit platter, trek bar, many coffees

Just checking in, on holibobs with my DC in San Francisco, managing to eat very well including dim sum in Chinatown today

@OhRiRi took me a while but I’m a massive tofu fan too, marinating but also doing the double freeze method then dusting in corn flour and frying - GAME CHANGER

Wow Kobani You do live a glam life! Yes, freezing tofu totally changes it's texture, I always forget that.

Respect RiRi That's a job I couldn't do (on the coalface) especially these days.
