Happy new year all!! 😬
Just emerging from a fog of irregular meals and food (and drink lol). Have enjoyed satsumas, dates and roasted veggies as well as plenty of more indulgent things. At the other extreme, friends of friends provided food for a small and low key NYE. I had a piece of dry bread and lots of dry roasted peanuts and Pringles 😂
Back to work Thursday but still eating like Christmas here, with panettone toast for breakfast so far

Ostryga · 04/01/2022 13:53

Afternoon all! Yesterday was a lovely lazy day. Not looking forward to the school run and work tomorrow!

B - banana, peanut butter and flax smoothie with oat milk
L - sushi bowl which was sooooo good - highly recommend! With spicy cucumber salad, wakame seaweed, corn, carrots and spring onions. Spicy vegan Mayo dressing.
D - took Dd out for dinner and had a fab vegan burger.

Vegan no,4 What we eat every day !! Everyone welcome
SapatSea · 04/01/2022 14:49

Oops fell off the thread! Happy New Year to all.
We had family staying at Christmas (meat eaters) and we moved last year to a tiny house, so no double oven or 7 ring burner anymore. Luckily I got a Tefal mini oven recently which added to the regular single oven helped keep meat and vegan things totally separate and stopped "daggers being drawn".

Today: Hot chocolate, biscuits.
L: Potato bread, mushrooms, tomatoes, parsley
D: Dal, Roti, lemon garlic spinach

KobaniDaughters · 04/01/2022 16:35

Morning everyone and welcome @Ostryga your lunch looks lovely

Emerging from the fog too - still 8 hours behind you all so just had black coffee so far but back on the thread as of today

KobaniDaughters · 05/01/2022 06:17

PartTimeDomesticGoddess · 05/01/2022 09:32

I'm back to the grind tomorrow @Ostryga - I've also loved being off for the last two weeks
@KobaniDaughters are your parents still with you? Did you get to Mexico City?

Yesterday was

D: kimchi udon noodles from my new Bosh book
And lots of snacks...

ppeatfruit · 05/01/2022 10:00

Ostryga I love Dosa, hope they work out for you
PartTime Bosh books always seem reliable. Hope you find some great recipes and inspiration. Did you make the Kimchi yourself?

B: Porridge, pear puree cinnamon, seeds and nuts
L: Nut Burger and salad
D: Beetroot, parsnip and dill Rosti, Horseradish sauce, cabbage with caraway seeds (might need to think of a protein to go with it).

Curlyreine · 05/01/2022 18:42

Today I have spent the day cooking and prepping/snacking for my food for next few days.

Smoked paprika roasted sweet potatoes.
Char grilled Brussels sprouts
Facon and oven dried tomatoes
Leek, mustard and mushroom pie filling. (Tomorrow shall buy filo pastry and thyme).
Green bean salad.

Am eyeing up a Swiss chard/potato/sumac onion gratin.

Am all cooked out now so will probably have a bowl of granola for dinner/supper.
(And a glass of gin)

Curlyreine · 05/01/2022 18:43

And mango compote to go on top of chia pudding

PartTimeDomesticGoddess · 05/01/2022 21:41

@ppeatfruit my panettone is vegan. Am slightly gutted that I only discovered how much I like it after I'd started to eat vegan (and it becomes 3x the price!)
@SapatSea yes, I've have good success with Bosh (sticky toffee pudding of theirs was really good at the weekend). I didn't make the kimchi, I really should but can't quite psych myself up to it
@Curlyreine that sounds like awesome food to have in the fridge ready to go
@Ostryga how were the dosa?

Today
B: porridge with soya milk, golden syrup and seeds
L: tomato sandwich, satsumas, dates
S: mince pie and alpro custard, chocolate
D: stew and dumplings with broccoli. Stew included Richmond sausages, M&S chorizo, cannellini beans, carrots, celery, parsnip and a bit of celeriac

ppeatfruit · 06/01/2022 09:58

PartTime They sold 14 types of Italian made Pannetone in the local organic shop in Forest Row, England not one was vegan or wheatfree! One was chestnut and chocolate chips though, very tempting. Grin

Sapat Beetroot rosti sounds good , did you make it? I just mix in a spoonful of yeast extract spread into things. Did you know that, that and tofu have more protein per gram than steak? !!

Curly Welcome (i don't recognise your user name if you've NC either way you're welcome Grin ) I often do a day's cooking too it's the finding recipes for all of it I find onerous! I steamed a lot of roots yesterday and will freeze some turnips and celeriac ready for 'neeps n tatties' for Burns Night!

B. Yesterday's smoothie
L. Steamed cauliflour on toast, tamari olive oi and horseradish sauce with leftover mushroom and onions.
S. Pumpernickel with yeast spread and pnut butter

KobaniDaughters · 06/01/2022 16:02

Hello! Thanks for asking @PartTimeDomesticGoddess my parents are still here but my dad got all freaked out about getting stuck in Mexico so we didn’t go - I’m gutted because I think it would all have been totally fine

Parents have taken the D.C. away for a few days though as they’re still off school and we’re working so we’re enjoying a bit of peace and quiet and eating food we want to eat - and cooking together which never happens!

L: feta and avocado salad
D: numbing sichuan style tofu hotpot with ancient grains

lolly07766 · 06/01/2022 16:47

I'd like to join Smile

Ostryga · 06/01/2022 18:07

Evening all!

@KobaniDaughters that sichuan tofu sounds incredible!

Didn’t make dosa in the end - was knackered after work. Think I was being a bit hopeful so had gnocchi, pesto and green veg.

Today
B- porridge, oat milk, seeds, peanut butter and the Bonne Maman cherry compote
L - hummus and grated veg wrap,
D - Papa Johns! They’ve got 50% off all vegan stuff so I’m being ultra lazy and ordering in.

Curlyreine · 06/01/2022 19:05

I am a regular name changer and dip in and out of these type of threads!

Today I ate some
Of the things I made yesterday, plus spinach (which was not nice). And granola with cashew milk.

Just put some random gas to be used up quickly veg, lentils and beans in the slow cooker for soup tomorrow. Will add a little liquid smoke to it as well before blending

lolly07766 · 06/01/2022 19:33

I've had
Mushrooms on toast
Homemade veggie soup
Homemade Black bean burritos with vegan ranch dressing and cauliflower wings 😊

PartTimeDomesticGoddess · 06/01/2022 22:42

Hello @lolly07766 😊 Lush dinner
@KobaniDaughters what a shame about Mexico City but enjoy the DC being away 😬 And I agree with @Ostryga that tofu sounds amazing
How did you find the papa johns @Ostryga? I've had it ordered for me at work and thought it was ok, not the best cheese though imo
@ppeatfruit I can recommend mindful bites panettone if you ever come across it

Back to work today after 2 full weeks off, which was a bit of a shock to the system lol

B: Monday smoothie - dates soaked in coffee, frozen banana, soya milk and cashew nut butter (made your original way @KobaniDaughters as DD18 had finished the peanut butter 😂)
L: leftover sausage/bean/dumpling stew
D: lasagne (another Bosh) with peas and broccoli
S: 2 clementines, seed bar

KobaniDaughters · 07/01/2022 06:48

@Ostryga and @PartTimeDomesticGoddess it was in the vegan Japaneasy book - yet to have a duff recipe from there!

L: falafel and tahini salad with shredded cabbage
D: we ordered in, I had an impossible Thai meatball bowl thing, then finished off the last of the fudge my mum bought me for Christmas

PartTimeDomesticGoddess · 07/01/2022 07:08

Ooh thanks @KobaniDaughters - I have that book! Will take a look, I'm a meal short for the next few days in my current meal plan 😂

ppeatfruit · 07/01/2022 10:35

Oooh thanks for that recommendation PartTime Where did you buy it?
Lolly You're very welcome Grin no need to ask Grin

Curly too Grin the "liquid 'smoke" sounds a weird one to me !

Kobani That really is useful of your parents!

Oyst That book is good ! The author is a bit whimsical but it's full of good unusual ideas.

B. leftover smoothie, figs and walnuts
L. Mixed HM root and leek soup.
S.Carrot/grated fennel/shallot salad with pnut butter/yeast spread on Kamut bread.

OP posts:
Ostryga · 07/01/2022 12:14

@PartTimeDomesticGoddess I find the trick is to order it without cheese, then stick some on (I’m an Epic violife kinda gal) and shove in the oven for 5 mins when it gets delivered. The cheese they use tastes like old socks and they use far too much!

Hectic day today, so skipped breakfast
L- Tesco meal deal Blush vegan BLT (not great tbh, wouldn’t recommend) mango and an Ella’s kitchen nut butter ball thing.
D - Mapo tofu - have a craving for sichuan now!

@KobaniDaughters thanks for the book rec, have ordered
