Also I have some leftover coconut milk - anyone got their all favourite korma like Dahl recipe to hand? Thought I’d make something to pop into the freezer for next week

PartTimeDomesticGoddess · 02/12/2021 22:16

Your curry sounds good @SapatSea and welcome back @KobaniDaughters
Tofu poke sounds lovely, as does tahini miso mushroom pasta
This is my (current) favourite Dahl recipe veggiedesserts.com/red-lentil-dahl/

L: kiwi, butternut/cavalo Nero/chickpea stew
S: Apple, cashews
D: jacket potato topped with future tuna/Mayo/black olives and nooch. And a big salad. Followed by raspberry Swedish glacé ice cream

The future tuna was ok. Texture wasn't quite right but tasted like tuna

Arethechildreninbedyet · 03/12/2021 21:11

Just me and the children tonight, DH at work.

Sushi Rice seasoned with white wine vinegar, salt and a sprinkle of sugar.
Crispy Panko Breaded Tofu
Braised Garlic Brocolli
Katsu Sauce (I cheat and use mayflowers!)
We've also rolled a little cucumber and avocado and made sushi with some seaweed I found in the cupboards.

I was going to make buttered mash with some reduced Asda Beef Slices I have in the freezer with gravy and greens but DC didn't really fancy it after having a roast at school so I imagine we'll have that tomorrow instead.

Arethechildreninbedyet · 03/12/2021 21:13

Lunch was leftover Garlic Lentil Dhal and Rice with salad.

Breakfast was toast with cranberry sauce (accidentally confused it with jam and couldn't lose face in front of the children if I didn't want to end up remaking three breakfasts) with some fruit salad we made for pudding a few nights ago. Oddly would recommend cranberry on toast!

PartTimeDomesticGoddess · 04/12/2021 13:20

😂 @Arethechildreninbedyet at cranberry sauce on toast

L: black bean chilli, rice, beetroot and guacamole
D: oven roasted (supermarket frozen) Mediterranean veg with pasta, hm spicy tomato sauce and Asda and moving mountains fake meatballs (half and half). All covered in nooch
S: chocolate orange rice cake, satsuma, kiwi, salted nuts

KobaniDaughters · 04/12/2021 16:46

L: black bean enchiladas and an avocado salad
D: went to a friend’s and ordered a curry - unfortunately quite a lot was over cooked (the poppadoms, the broccoli in the veggie jalfrezi and apparently the chicken was super dry) and the Chana masala sauce was a bit watery but the flavours were good - introduced our American besties to a proper curry takeaway and as is right they couldn’t move afterwards 😂

KobaniDaughters · 05/12/2021 06:34

L: avocado and kimchi salad
D: went to our fav vegan pizza place and shared a meatball calzone and aubergine calzone with DH

PartTimeDomesticGoddess · 05/12/2021 23:07

Yesterday
L: satsuma, kiwi. 2 slices of toast, one with marmite and one with avocado
D: chickpea and tomato curry (dirty vegan), curried cabbage, rice and hm chapatis
Lots of nuts/chickpeas/crisps/ice cream

Today
Met a friend at pizza express for lunch (sloppy vegan and a black coffee)
Fuck ramen with cabbage, edamame, broccoli and sesame roasted sweet potato for dinner
S: small apple, 2 dates, salted nuts, chocolate

KobaniDaughters · 06/12/2021 04:59

B: marmite on toast
L: leftover curry
D: DH home made tagliatelle which is always lush, and did a veggie bolognese with it

SapatSea · 06/12/2021 12:07

PartTime Home made chappatis - so nice compared to shop bought ones.
KobaniDaughters - yum, home made tagliatelle. I never have pasta anymore as the kids have gone off it and H is low carbing.

B: porridge, cinnamon, star anise plums.
L: Beanburger and salad
D: Butternut squash, leek , mushroom, sage and pea gratin. lemonyBroccoli
sn: seeded oatcakes

KobaniDaughters · 07/12/2021 05:53

@PartTimeDomesticGoddess have only tried making chappatis once, do you have a good recipe? I have Dahl ready for tomorrow and marinating cauliflower tandoori style

DH is pretty awesome at pasta and other wheat based carbs as he mills the wheat fresh

L: toasted bagels with cream cheese, roasted beetroot and cherry Tom’s
D: hummus then mushroom bourguignon and mash and peas, frozen Bon Bon desert things basically like choc ices!
S: pistachios

PartTimeDomesticGoddess · 07/12/2021 05:59

@KobaniDaughters here's the recipe I use. I'm pretty sure chapati flour is just wholemeal flour and this has always worked perfectly (as long as I have the pan hot enough for dry frying)

KobaniDaughters · 07/12/2021 15:31

Thankyou!

PartTimeDomesticGoddess · 09/12/2021 13:52

How's everyone doing? Too busy to post often, but keeping notes to post when I can.
Did you make chapatis @KobaniDaughters?
@SapatSea - completely agree about hm chapatis being loads nicer than bought ones. I feel my chapatis and flat breads are good, naan to master next. Have you made those? I have some sesame seeds that I need to use up. I think you've posted sesame tofu before? Do you have a recipe that you follow? (Or am I confusing you with someone else? 😂)

Monday
L: black bean chilli and rice, with guacamole and beetroot
S: Apple, chocolate
D: ginsters pasty with mash, cauliflower, broccoli, carrots, peas and gravy

Tuesday
L: chips, bread and butter, curry sauce (lunch with my team and fish and chips were their choice lol)
D: quiche, sweet potato fries, broccoli, peas and roasted cherry tomatoes. I also had a salad before my dinner because of the double carbs for lunch 😂

Wednesday
L: kiwi, beetroot, NCG mushroom soup, marmite sandwich
S: satsumas, choc orange rice cakes
D: creamy pasta with leeks, sprouts and hazelnuts (adapted from bbc good food - was ok, but not convinced the sprouts worked tbh). With broccoli

KobaniDaughters · 09/12/2021 16:09

@PartTimeDomesticGoddess I didn’t - I’m just slammed with work but think I might spend the Christmas break trying to master something like chappatis or naan

Can’t remember what I had during the day on Tuesday but Dahl, mustard seed rice and tandoori cauliflower went down well for dinner

Yesterday:
L: chickpea and kimchi salad
D: honeynut squash and sage risotto and broccoli

Debating tonight - going to do a tofu scramble with mini roasties (breakfast potatoes as the yanks like to calm them) but might go
Mexican style and turn them into burritos….

SapatSea · 09/12/2021 16:20

Hi PartTime, I think I have mentioned sesame tofu. I sort of use this recipe:
www.feastingathome.com/3-simple-ways-to-add-bold-flavors-to-tofu/

I used to make my own breads but have got out of the habit. Lack of freezer space (as they are worth making in bulk) and feeling lazy about the clean up are my main excuses but I'm always disappointed by shop bought Indian and Middle Eastern breads. I've been buying M&S Roti recently and they aren't too bad (unlike the chappatis which taste sweet to me) but they still have horrid sounding ingredients like Glycol as a humecant in them.

Your meals sound great as usual. I've been lazy of late. I've been eating a lot of dal with veg thrown in, nut roast mash and veg. I even had some fries with mushrooms and tomatoes for lunch today. Definitely in comfort food mode.

KobaniDaughters · 09/12/2021 16:54

Oooh I’m going to try that sesame
Tofu recipe!

My parents fly in next week so starting to pull together ideas for dinners to remind them animal
Products don’t have to feature for food to be delicious!

PartTimeDomesticGoddess · 09/12/2021 19:51

Ooh thanks @SapatSea, that looks perfect. Might even become tomorrow's dinner. I hadn't thought about freezing hm breads, might give that a go when I have more freezer room after Christmas
@KobaniDaughters know exactly what you mean about not having enough time 😂 How lovely that your parents are coming over for Christmas. What's the covid situation in SoCal?

KobaniDaughters · 09/12/2021 20:45

@PartTimeDomesticGoddess yeah I’m so excited! We’re supposed to be going to Mexico City Christmas Day - New Year’s Day as well SO EXCITED

No idea what our numbers are but we continue to wear masks indoors everywhere and the kids in schools (that’s never changed) and now to go to indoor things like sitting to eat or the theatre/cinema etc you have to show proof Of vaccination or recent negative test but ultimately no major changes because we haven’t really rolled anything back in months and months

KobaniDaughters · 10/12/2021 03:43

B: croissant
L: leftover risotto and baked beans on toast
D: tofu scramble burrito

KobaniDaughters · 13/12/2021 17:06

Either we’re all very busy or very hungry Grin

My dinners the last few days have been a mishmash of whatever I throw together from the freezer or cupboard (tomato pasta, potstickers) to hosting a wee book launch party for a friend and spending a whole afternoon making fancy canapés!

PartTimeDomesticGoddess · 14/12/2021 15:46

Busy and hungry here @KobaniDaughters 😬

Highlights from me include katsu curry, the sesame tofu on Friday (which was lush thank you @SapatSea) and hm naan bread on Saturday (which I ate with frozen tarka Dahl and mixed veg curry takeaway leftovers). The naans were sooo good, I'll definitely be doing those again

www.noracooks.com/vegan-naan/#recipe

Yesterday was
L: kiwi, beetroot, GRT sticky rice with broccoli
D: veg crumble with roasted cauliflower

PartTimeDomesticGoddess · 14/12/2021 15:52

Tell me more about the fancy canapés @KobaniDaughters!

WildStallyn · 15/12/2021 18:48

Today was a good food day!

Brunch of posh beans on toast (borlotti beans, chopped toms, shallots, smoked paprika, a little sugar, salt and pepper on toasted sour dough topped with fresh herbs and black olives).

Snack of a banana

Dinner of vegetable dhansak - first time cooking this recipe and it was really delicious.
