Sapat Thanks Grin As you can probably tell I follow quite a strict way of eating for my health and weight. (not on any meds). Only the odd herbal supp. It's funny 'cos dh is always ill and he's the one who loves doctors. ! (i'll pm you with details if you're up for it).

B. Finished smoothie with grapes and extra fresh lemon juice for my gum!
L. Blended the pea\root stew to make soup with tamari, tofu yoghurt and pumpernickel.
S. Ryvitas with endive\raw red onion\ basil salad and spreads.

Sn. picked at not a good HM carrot cake ( I took it out too early and put yeast in it without letting it rise first Blush ).

Saturday

What does jackfruit taste like Part ? How do you cook it? For some reason I can't bring myself to try it Grin maybe it's the name? Grin

L. I made a steamed leek\turnip\carrot dish with a mustard/nooch and yeast spread Bechamel sauce. Had it with spinach. Couple of pieces of low sugar no dairy dark. choc.
S. Fruit fest with HM grape and lemon juice, grapefruit and pumpkin seeds.

Just checking in sorry haven’t been posting in a minute! @ppeatfruit jackfruit doesn’t really have a taste (very faintly similar to hearts of palms) but the texture means you can make things like “pulled pork” and I love it in a curry for a different texture too

Yesterday I ate a HUGE jar of cashew yoghurt meant to last a few days at 10:30am but then wasn’t hungry until 6:30pm!! Made vegan richa’s instapot lasagne soup for dinner which is a solid staple in our house

Going out for Ethiopian food this evening 😋

Have been busy (keeping notes but not finding time to post them!)
@ppeatfruit like @KobaniDaughters says, not much flavour which means it's quite versatile as it can take on the flavour of whatever you're using it in, but I like the texture (mostly in a pulled pork type sub or in a curry)

Monday

L: kiwi, beetroot. A piece of naan and roasted cauliflower/peppers/butternut with the dregs of the jackfruit/chickpea curry (and the sauce) from last night
D: creamy leek/cannellini bean/squash and pesto filo topped pie, broccoli, carrots, green beans

Tuesday
B: kiwi, porridge with sultanas and seeds
L: beetroot, cherry tomatoes, cucumber, veggie paella
D: leek and potato soup with crusty bread. Alpro pistachio and chocolate mousse, satsuma
S: Apple

Wednesday
B: same as Tuesday
L: bean and chorizo stew with dumplings
D: cauliflower, macaroni and spinach in a ‘cheese’ sauce with roasted cherry tomatoes

Oh thanks Kobani I don't like hearts of palm, they're sort of 'nothingy' if you see what I mean . Yes maybe needing lots of added flavour!

Hi, sorry I fell off the thread a bit. I've also been meaning to try Jackfruit. Is it better to buy the tins of ready pulled young Jackfruit or the tins with pieces and then chop them? The curry sounds like a good idea. I've also seen a recipe for a white bean chilli using it(and of course recipes for tacos, rolls etc.)

I finally saw some spaghetti squash (and acorn) for sale but they looked small, tired and were £5 each! so I passed.

Monday: Fridge clearout day.
B: vegan scone, jam, apple
L: fennel and canellini bean soup

I'd not had black rice before, I really liked it. My H who hates brown rice liked it too, he said it is how brown rice should taste! My mind kept thinking I was about to eat black beans.

I had the vegetarian delight so basicsllly a sampler of all their veggie dishes on injera- there’s a Little Ethiopia in LA so go not infrequently, I love it!!!

KobaniDaughters I like the sound of your Ethopian meal - lots of dishes and Injera to scoop with. I haven't the patience to make properly fermented Injera but have read recently about how good Teff flour is for you (it's getting much easier to buy (UK). As a result I put these really simple recipes (probably not authentic) in my recipe folder:

Today:
B: Hot Chocolate, Seeded Oatcakes, plums
L: Beanburger, salad
D: Tofu, pea puree, shitake, baby potatoes, beetroot.

Kobani That Ethiopian food sounds like it's plug full of chillies and I can't stand 'em !

Yes Sapat I was surprised how nice black rice is (it doesn't look appetising does it? Grin ) , but like whole ,brown, rice it really HAS to be cooked a LONG time. recipe; Soak the rice first for however long you've got. (I don't throw the water away) Using half a thumbs length of water above the rice bring to the boil without a top, then put the top on the saucepan tightly, some people put a cloth over it, DON'T LEAVE IT !!!!!! Then cook on the lowest heat you've got (I use a diffuser, because we have a very old fashioned gas hob!!) leave it till it gets little holes in it. Then turn off the heat and leave. (if it's not soft enough for you repeat the process). It's funny I never used to like whole rice when mum cooked it because she wasn't cooking it right!!!!
B. Smoothie
L Made a warm salad with rocket\endive and fried up a large mushroom with mashed tofu, garlic and onion\olive oil.
Picked at nuts,seeds spelt bread etc. Choc pieces. No room for Supper!

Thanks for the link @SapatSea I always come home wanting to cook Ethiopian food when I go out for it, and little Ethiopian has a few markets so I should be able to get any ingredients not widely available there

@ppeatfruit I would say a few of the dishes don’t have chilli in them, or at least don’t taste like they do. I love the flavours of Ethiopian food, so unlike anywhere else!

Kobani Ref. chillies and pepper I LOVE ginger, mustard horseradish and other spices except them, it's just that they that set my mouth (and ahem TMI ..) on fire, they seem to kill my taste buds too ,which I've noticed is happening a bit anyway , due to age I suppose!. So you can imagine that buying foods anywhere is a bit tricky for me!

Oh and Sapat Thanks for that about the squash, it's so much better than sawing away at a raw pumpkin isn't it ? Grin

@SapatSea as long as you buy the green jackfruit I don't think it makes much difference. I find that it needs quite a lot of agitating in the pan if it's in bigger pieces though so tend to chop it a bit before I use it if it's in bigger piece

Thursday

L: Cauldron Falafels, pink pickled onions, salad, harissa
D: Corn and ginger soup. Cauliflower rice with edamame, ginger, garlic, peas, cabbage, soy, sesame oil, white pepper, spring onions, furikake. Chilli oil on the side.

Today:
B: Seeded oatcakes, apple, blueberry and cinnamon puree
L: Miso soup, courgetti, mushrooms etc.
D: red lentil dal, spiced cabbage and potatoes, roti, coriander nut "chutney."

D: went out with friends to a Mexican place, shared elote corn, crispy cauliflower and chips and salsa and had a mushroom taco and a falafel taco to myself. And two margaritas!

Sunday:
S: two banana, chocolate and oat scones made for me by an actor I had a meeting with in the morning
S2: took DC out for ice cream and had blueberry with preserved lemon flavoured one
S3: some of the mash I made to go on dinner
D: sheperdless pie with roasted broccoli followed by a bowl of blueberries

ppeatfruit I think that hybrid veg is branded as Caulishoots here. Did you like them? I bought some last month in my online delivery but sadly although they were 4 days within date they were a bit grey on top and lacking in flavour. Not worth the £2 for a tiny bag.
