Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

We aren’t vegan but we have one day a week and ours was yesterday.

Smashed avocado and tomatoes on toast for DH & DS (I did do a poached egg for DS as well as he’s only 2 and would get hangry on just avocado toast).

Lunch was lentil bolognese - green lentils, onions, green peppers, carrots, celery, and all of the garlic in a herby tomato sauce with pasta.

Supper was a homemade curry with peppers, broccoli, green beans and potatoes in. I used coconut yogurt in the sauce.

B- pnb and marmite on toast. 2 cups of tea with soya milk.
S- cupa soup. Satsuma.
L- big salad with the lemon and pepper tuno, bread roll, cup of tea, apple.
S - ginger biscuits, some cashews.
D- tomato chillie pasta bake with olives, garlic bread, broccoli.
There's a vego bar in the cupboard with my name on it😁

Lefty not really! I was a standard sponge (vitalite and egg replacer) and I chucked in some blitzed plums. I didn't drain any juice off (I figured it could replace the water required for the egg replacer) so the cake was wet as hell. But still tasted nice with custard anyway!

D: pasta puttanesca (minus the anchovies)

Today was brutal because I had a bone graft on my jaw so all I’ve had is antibiotics, antiinflammatories, pain medication, half a glass of a mango and orange smoothie, a green tea and lots of water 😔

Yesterday was much more fun as we had friends for dinner:
B: black coffee
L/S: bag of almonds before rock climbing, my coffee/almond butter/banana smoothie after
D: roasted cauliflower, chickpea and carry warm salad tossed in an orange tahini sauce, vegan Moussaka with baby kale, pomegranate and pistachio salad tossed in a rose water dressing, upside down pear and cardamom cake with soy vanilla ice cream for pud. One glass of white wine

Yesterday I had -
B garlic mushrooms and tomatoes in toast. 2 x tea.
S- banana hand full of cashews.
L- cheese salad sandwich ( apple wood cheese omg! The best cheese ever!) Packet of walkers chicken crisps, cup of tea.
S- chocolate brownie.
D - veggie chillie, spicy wedges and corn on the cob

Yesterday I had -
B- chickpea salad wrap. 2 cups of tea.
S- 3 chocolate digestives. Another tea.
L- cheese beetroot and picalli sandwich, mixed salad. Banana.
S - trek coconut flapjack.
D- veggie stir fry with baked crispy tofu and noodles. Some swedish glacé raspberry ice cream.
Lots of water through the day. Another tea and packet of walkers chicken crisps.

Yesterday I had -
B - blt using this isnt bacon. 2 cups of tea.
S- apple and satsuma. 2 pints water.
L- carrot and red pepper soup. Bread roll. Cup of tea. Banana.
S- 3 chocolate biscuits.
D- basil tomatoe butter bean stew with cous cous and watercress salad.

Bowl of olives and some cashews.

B- pnb on toast. Banana and 2 cups of tea.
S- 4 chocolate biscuits.
L- big salad with lemon and pepper tuno, hm coleslaw, pickles, olives, tomatoes etc, bread roll. Cup of tea. 2 pints of water.
S- trek coconut flapjack.
D - Linda mac sausages, garlic mustard mash, broccoli and green beans with gravy. 2 satsumas.

I'd like to follow too, currently vegetarian. Which plant milk is most like cows milk? I love cow's milk but want to go vegan for ethical reasons.

Hiya, went I first went vegan, I tried lots of different milks, they're all different and guess we all have different tastes, so maybe try a few out?
But, to me soya milk -tescos one in the red carton, is the most like to me. When I have it in my tea, it's like what I remember normal tea tasting like ( but we did use to have skimmed milk )

L: leftovers from roast dinner the night before
D: BBC Good Food one pan spicy rice (I use fresh spinach instead of frozen) and some Jaffa cakes

PirateShip (love that song btw!) I am so sorry to hear about your bone graft! Sounds like you're getting some good flavours in even though you can't eat much... how long is recovery likely to be?

B: pumpkin, sunflower, chia and linseeds plus ground almonds with fruit and soya milk
L: red lentil and sundried tomato pate on lentil rice cakes with avocado
S: Vego fruit and nut, plus montezuma's dark choc buttons. I am a beast for chocolate. Also a huge satsuma and a plate of raw veg.
D: stir fry with tofu, carrot, broccoli and pepper
2 mugs of milky redbush tea with soya milk

LittleSweet I like sojade soya milk with calcium the best, but I've been drinking it for years and am totally used to it. There are so many different milks out there these days. A lot of people love oatly barista in hot drinks especially. I would advise trying lots of different kinds but definitely don't expect to love alpro as I think it's pretty bleugh.

Thanks @DamnItsSevenAM it’s so boring and slower than I thought it would be!
I am however happily living vicariously through this thread

Yesterday was an insipid shop bought Thai red curry butternut squash soup, homemade smoothie “bowl” (so thick I could eat it with a spoon) of mango, almond milk, mixed nut butter and spinach and mashed potato and hummus for dinner

Today:
B: mango, matcha, spinach, almond butter, almond milk, avocado smoothie bowl
L: mashed potato and hummus and pesto
D: mushroom soup (home made this time, now I’ve got some energy to cook)

Am working weds-Fri to making bulk soups to carry me through until the weekend. I imagine every day this week to look like the above!

PirateShip I'm impressed by your creativity! A friend of mine regularly has to live on purees as she has EDS and often dislocates her jaw. She was thinking about writing a cookery book for pureed food and I thought it was a brilliant idea.

I love smoothies so let me know if you want any recommendations. My current favourite is soya milk, pineapple and spinach, and I add all kinds of extras (ground linseed, ground almonds, ground chia, protein powder, molasses) to pack in the nutrients. This morning's was 30g protein which I was pretty happy with!

That’s awesome, I love smoothies too but aren’t allowed my favourite which is frozen banana, cold coffee, dates and almond butter!!

We make smoothies and turn them into ice lollies all the time here to get more nutrients into fussy DD

As well as being intolerant of quorn, onion and cauliflower, I realised yesterday that I'm allergic to soya. So itchy, stomach pain and sneezing. I'm also intolerant of a lot of fibre, so have to be sparing with lentils. I read that I could also be allergic to other legumes. So I'd rather use them sparingly. Green beans and runner beans plants give me hives when they touch my skin. I'm also allergic to pineapple and vanilla.
Is there a way to be vegan?
