Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

B: ground nuts and seeds with fruit and soya milk... I tried adding protein powder (which goes nicely in a smoothie) and found it is rank stirred into a bowl of fruit and seeds.
L: No bull burger, salad and avo
D: falafels, hummus, salad, beetroot, sun dried tomatoes
S: Off the Eaten Path crisps; I'm quite fond of these although they seem very salty. Plus dark chocolate, plate of raw veg, satsuma.

I know this is not a weight loss thread but I've lost 1 stone 5 lb by eating lowish carb and vegan for 4 months. I'm very pleased and feel a lot healthier and more energy as well as improved self esteem.

Yesterday I had
Oats with fruit and yoghurt. 2 cups of tea.
Lentil chickpea salad with marmite rice cakes. Cup of tea.
Roasted Pepper and tomatoe pasta with chillies and olives. Bit of raspberry ice cream.

Various snacks - 2 satsumas. .an apple. Packet of crisps.

Today
Scrambled tofu, mushrooms and tomatoes with rice cakes and hummus. 2 cups of tea.
Chickpea beetroot salad with granary bread. Satsuma.
For dinner later I've made a lasagne, wich we'll have with garlic bread salad and hm coleslaw. Mince pies with alpro custard for pud.

I have a (vegan) beer hangover from celebrating some good news with my best friend. Only managed coffee w/oatly and crumpets so far!

jess3817 what's the scoop with the scrambled tofu? I keep seeing it in recipe books but I can't find black salt anywhere; is it worth the effort?

That burger and dirty fries sound so good!

I just crumbled firm tofu in a frying pan with some melted butter and fry it with a little tumeric, black pepper, little maple syrup, nooch and black salt for the eggs flavour. Stiring frequently, only a medium heat so it doesn't stick.

So yesterday I had -
Mashed advo tomatoes and mushrooms on toast. One with hummus too. 2 cups of tea.
Spicy chickpea salad with sweet potato small fruit salad, 2 cups of tea.
Cauliflower lentil curry with rice.
2 satsumas and a packet of crisps as snacks

It was absolutely ridiculously nice.

Have had marmite crumpets for brekkie and jacket potato with daal and spinnach for lunch

Bagel with spring onion cream cheese and tomato.
Leek and potato soup.
Going to make some sort of curry with bombay potatoes for dinner.
Have had 4 cups of tea,pint of coke, and a satsuma.

Hi why is vegan sweets more expensive then normal I do Christmas fairs and has made lots of normal sweets ie fudge peppermint creams ect was asked if I made vegan and how much extra I would charge I said the same price and went shopping today to buy the different ingredients and it's around the same cost to make and maybe 10 mins extra time

Yesterday I had super green soup for lunch and a lentil, quinoa and spinach chilli with sweet potato wedges and a lovely addition of soy yoghurt, garlic and cucumber dip.

Today I've had a green tea, alpro yoghurt and blueberries and dinner was mashed potato, roasted green veg medley with a little plant based flora and a spoon of mustard, parsnips and carrots with vegetable gravy. Might have a banana later if I get peckish!

Today we tried the vegan 'no duck' spring rolls from Aldi. Twice the price of veggie ones but the kids liked them.

Yesterday for lunch I had
Chips and cup of tea ( was at a soft play centre and the only vegan option)
For dinner we had roast potatoes, parsnips and carrots with cabbage, sprouts, stuffing and gravy. Alpro choc pots for dessert.

Yesterday I had pancakes with Naturli & maple syrup.
Tomato, quinoa and kale soup.
Sticky cauliflower bites with brown rice & avocado/spring onion salad.

Today will be:

Toast & almond butter
An M&S sandwich as I’m at work and didn’t pack any lunch.
Lentil moussaka I batch cooked and froze when I was feeling particularly energetic, with garlic bread & a salad.

Lunch today isn't strictly vegan as I'm making a roasted veg frittata - I only use eggs from a local farm though where all the chickens are out in a field and come clucking at you when you visit. Although I have made a vegan coleslaw to go with it.

Dinner is chickpea and spinach madras with brown rice and lentil flatbread.

Hello I'm vegan at home

B. My own seasonal fruit smoothie with pears, pear juice, water,
soaked linseeds, whole lemon grated and juiced, chopped figs. hange the recipe every other day.
L. 3 slices of spelt toast with olive oil and Pnut butter, with a salad of grated carrot, onion, and endive with a mustard, dressing.
S. Leek and pea soup with ryvitas

drinks are filtered water and green tea also chicory and ginger (coffee substitute)

Snax; dates, walnuts I'm on a low sugar eating plan for my teeth and skin !! it works Grin

L - huel and a bag of lightly salted popcorn.

D - Will be pasta with lentil bolognese (that I made last week and froze) and garlic bread at DS’s request.

Trek creak bar.
Leek and potato soup with crusty roll.
2 cups of tea.
Sausage casserole with garlic mustard mash and green beans.
Vego bar.

Beans and mushrooms on btown toast with brown sauce. 2 cups of tea.
Chickpea salad with marmite ricecakes, satsuma, packet of prawn cocktail crisps.
2 cups of tea.
Dinner will be lentil and sweet potato curry with popudums.

Breakfast - cup of tea with almond milk (new love) with mixed fruit and nuts

Lunch - homemade basil pesto and home made tomato pesto toastie

Not had dinner yet, but I think I'll make a carrot and leek soup

B. almond and soaked linseed pear smoothie with Half pear juice and filtered water (room temp.)

L. beetroot and white bean shepherds pie with celeriac and carrot , onion and garlic mash. Some Yeast flakes in the stock.

S. Dates, figs walnuts and pumpkin seeds. plus ginger and chicory hot drink.

Breakfast. Vegan shroomdogs, grilled tomatoes, garlic mushrooms, beans.
Lunch. Jacket potato with cottage cheese. 2 plums,1 apple
Dinner. Stir fry veg, marinated tofu, grapefruit. Blueberries Nakd bar.
I was working from home today hence the cooked breakfast, it's usually porridge with soya or almond milk and berries
