Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

B- vegan cooked breakfast and a soya coffee.

L- a Greggs vegan sausage roll. Husband was very impressed he found it. It was ok.

D- soup tonight, feeling rough and all I can face.

@Jolonglegs it depends what you mean by best - oat milk I think tastes the best in tea but it’s too creamy to have as a latte so therefore subs well in baking to replace full fat milk. I get flax milk for the kids smoothies for extra nutritional boost and I tend to have almond milk in lattes. I use soy creamer for my at home coffees but otherwise we don’t use soy milk

L: steamed broccolini tossed in tahini and lemon
S: iced oat milk latte
D: tempeh scramble, a handful of dates, 3 ginger biscuits and a cup of tea

B: Apple
L: Bulgar wheat with broccoli, garlic and tofu fried in sweet chilli sauce, topped with walnuts and pumpkin seeds.
D: big plate of salad, and two crumpets with flora buttery.
S: 8 squares of Green and Black's dark choc, bowl of Alpro custard and an Alpro caramel pot.

L: Mixed bean salad, two crumpets with Flora buttery
D: Veg curry
S: Bananas and custard, apple, Alpro caramel pot, five squares of Green and Black dark choc with peanut butter on top... sounds like quite a lot when you write it all down! In my defence, I went on a 40 minute run this morning!

Oh and I also made:

  1. My Christmas cake (veganised an old recipe by swapping butter for Flora, and egg for egg replacement; this is my third year in a row of this vegan cake and it's lush)
  2. Three jars of mincemeat (veganised a Mary Berry recipe by swapping butter for coconut oil, we shall see how it turns out)...
  3. A large jar of raspberry gin liqueur for BIL's Xmas present.

Yesterday:

B- porridge with oat milk, maple syrup, PB, chia seeds & cocoa nibs

L- poppyseed crackers with Applewood cheese - this stuff is delicious, I loved the dairy version and this has the same smoked taste 🤤 also lovely as cheese on toast.

D - butternut squash, kale & chickpea curry with roti. Super quick version using all frozen veg inc onion & garlic

Waitrose smoked carrot "salmon" and dill sandwich - amazing, might be forgetting to bring lunch more often - and some carrot sticks

Bean chilli and baked potato for dinner

Breakfast: homemade cold fried rice take away style from lasts nights tea
Snack: vegan sushi
Dinner: quinoa chilli and chargrilled squash
Snack: flora and marmite crumpet
More snack: space raiders
Tea: it will be burgers tonight if I get my own way Grin

I’m not dieting, as you may be able to tell

L - aldi one pot, nomo choc bar (delicious)
D - will be, quesadillas with kidney beans, avo, violife, sweet corn, onions etc followed by rice pud and jam.

Breakfast: leftover tempeh scramble and coffee
Lunch: insipid jackfruit salad at universal studios
Snack: coffee, date, banana, almond butter smoothie
Dinner: instapot lasagne soup, an orange, handful of almonds and cashews, ginger biscuit, 2 glasses of wine

Evenings are my nemesis!!

L- rice cakes with vegetable pate (in a tin from Asda with the free from stuff)

D - veg soup with a thick layer of nooch on top

S- cold Linda sausages, fruit

Quorn vegan ham and piccalilli sandwich

Stuffing balls, roast potato, roast parsnip, carrot, broccoli and gravy, followed by sticky toffee pudding and Oatly custard

B: "bacon" sandwich, toast and marmalade
L: skipped - massive breakfast
D: Creole style potatoes and green veg (it's a river ford recipe), vegan plum cake and custard (I use Morrisons powder and make it up with oatly, much cheaper than the Oatly one and I find the Oatly one goes v runny when warm).

Yesterday:
B: Sausage sandwich (Linda sausages, fried onion, homemade white bun)
L: just an apple as big breakfast.
D: Pizzas from the reduced section at the supermarket - one with pesto, sundried tomato, kale and mock mozzarella, one with mushrooms, spinach and smoked mock mozzarella.
S: Prosecco, Alpro dark chocolate pot.

Yesterday:

B: coffee with innocent hazelnut milk - it's v nice
L: roasted veg with vegan mayo and some salad (leftovers from the night before)
D: vegan lasagne from the Jamie Oliver Veg book. Delicious! Happy to post the recipe if anyone wants it.
