Eggs in porridge

I came across a recipe online that stirred an egg into porridge. This sounded vile to me at first but the recipe insists you can't taste the egg. My toddler is quite a fussy eater but one thing he loves is porridge and will eat it with almost anything mixed in: mashed banana, grated carrot with raisins and cinnamon, grated apple and a spoonful of peanut butter, raspberries mashed through with honey, etc.

I can mix a lot of things in that he wouldn't eat if they were given to him otherwise. He'd never eat apple or carrots for example. I also mix chia seeds and flax seeds through. It's great bang for my buck given the rest of his meals can be tricky.

Has anyone ever mixed an egg into porridge before? Is it utterly vile? I hope it works as it's another easy way to get e and nutrients into him!

Thank you for this thread, it's made my insomnia that bit more bearable! Come to think of it... I eat eggs regularly... do we have any research linking eggs to chronic insomnia?? 🤔

@SpinningTopps I love that DHMO link! I'm going to post it on the FB feed of my conspiracy theorist (and not the brightest ie no way will he get the joke or probably even read more than the first couple of sentences) relative to get his (lack of...) insight 😄

@Yourethebeerthief I cant advise on your actual question though I will now be trying eggs in porridge! I haven't read every post so sorry if it's been said already, but to get those evil eggs in him have you tried drop scones? Like thicker, cakier pancakes with egg - might be a different enough texture for him to try it! Can also be made with oats rather than flour I think, and can have mashed banana etc mixed in (Google brings up loads of recipes).

I can't face anything to eat yet so I just gave it a go with no trial run.

Separated the yolk and stirred it in after the porridge had cooked and the gas was off. Half a banana and spoonful of chia seeds too. Looked just the same except sort of creamier. No sign of scrambling. Son was none the wiser and ate it with some honey drizzled on top.

I'm making porridge like this from now on 😁

I like the idea of apple pie porridge. Do you cook your porridge on the stove or in the microwave? I usually put the oats and chia with milk in the fridge overnight so that the chia are soft and the oats have absorbed a lot of the milk. I like my porridge thick. I mainly just want apple pie now.

If you replace

on the recipe site with this

After this thread I tried it with my fussy DS and he didn't notice!! I'm thrilled. He used to be allergic to eggs but now isn't but hates them. With him being fussy I'm always keen to get protein and eggs into him.
