Eggs in porridge

I came across a recipe online that stirred an egg into porridge. This sounded vile to me at first but the recipe insists you can't taste the egg. My toddler is quite a fussy eater but one thing he loves is porridge and will eat it with almost anything mixed in: mashed banana, grated carrot with raisins and cinnamon, grated apple and a spoonful of peanut butter, raspberries mashed through with honey, etc.

I can mix a lot of things in that he wouldn't eat if they were given to him otherwise. He'd never eat apple or carrots for example. I also mix chia seeds and flax seeds through. It's great bang for my buck given the rest of his meals can be tricky.

Has anyone ever mixed an egg into porridge before? Is it utterly vile? I hope it works as it's another easy way to get e and nutrients into him!

Rice porridge (congee) is a staple breakfast/meal/comfort food in lots of parts of Asia and sometimes has egg either cracked and mixed in or served as a kind of condiment. It’s really yummy and nutritious.

As long as you don’t have the pan too hot your egg should just cook into the milk, think how custard or carbonara is made.

Good point about carbonara. I'm definitely trying this tomorrow morning.

Yes, world renowned, best selling author,. You do know that just because you haven't heard about him doesn't mean there is nothing to know.

Has been used as expert witness in legal court battles to do with food. The person is an expert.

I put an egg in porridge to try it, I really like it and it adds protein and other vits. Whey is also a good addition.

😂 thank you. I'm mental for porridge so I'm really chuffed that my son likes it. I also eat it in these ways (I'm Scottish so it should only be eating with a pinch of salt but honestly fuck that!)

My favourite though is with those massive golden sultanas cooked in right from the start so they go nice and soft, then topped with mixed seeds and a generous spoonful of Bonne Maman hazelnut spread. Or with sugar and lots of lemon squeezed on top.

Can't eat those ones around my son though 🤫

@Yourethebeerthief it will just be a matter of the timing. i make my porridge with milk so i would beat the egg into the milk before cooking. like others have hinted, custard and carbonara.

He cites all his sources. It's completely backed up.

One of my favourite dishes is eggs on yoghurt (Cilbir) so that may be worth a try although you'd have to temper down some of the ingredients I think.

Another porridge lover here too - we used to eat it cold with golden syrup :-)

Trying to figure out which way is best. Beat into the milk like you say, and then cook porridge on low heat?

Or cook porridge as normal and then plonk the egg in at the end when it's just about finished cooking and stir in well?

I think just the yolk would do?

Yes I used to eat an egg in porridge most days! I stirred the white in while it was cooking and the yolk at the end, and it's nothing like you would imagine it's delicious and the yolk gives it a lovely rich taste. I agree for a small person and therefore a small portion just don't bother with the white but put the yolk in, great way to get some protein and vits into your little one. 😋

You really need to widen your reading pile. All the major UK heart charities (inc BHF) fundamentally disagree with your statement and even go so far as to calling it outdated
