Eggs in porridge

I came across a recipe online that stirred an egg into porridge. This sounded vile to me at first but the recipe insists you can't taste the egg. My toddler is quite a fussy eater but one thing he loves is porridge and will eat it with almost anything mixed in: mashed banana, grated carrot with raisins and cinnamon, grated apple and a spoonful of peanut butter, raspberries mashed through with honey, etc.

I can mix a lot of things in that he wouldn't eat if they were given to him otherwise. He'd never eat apple or carrots for example. I also mix chia seeds and flax seeds through. It's great bang for my buck given the rest of his meals can be tricky.

Has anyone ever mixed an egg into porridge before? Is it utterly vile? I hope it works as it's another easy way to get e and nutrients into him!

Just popped on here to share this recipe for eggy oaty toddler pancakes... you can add peanut butter for extra protein.

A huge hit here with my kids. And convenient - you can put a few in a box and take them out for a mid-morning snack.

Can I just say OP (in between the crazy eggs are going to keeeeellll usss allllllll - seriously this has been debunked by people not connected to the egg industry but never mind) you are doing a fantastic job feeding your toddler, hummus and peanut butter and all the porridges are so good for him. As the mum of a fussy eater (20 plus years ago) I salute you and wish you had been my friend back then to give me all your good nutritious good ideas. Keep it up! They normally grow out of this phase at approx 18 when they leave home and realise they have to feed themselves three times a day. It's incredible what they will consume once they come to this horrible realisation. (should I mention that my internationally capped child exists on a daily ration of many eggs? <runs>)

But you’re ignoring actual real sources by scientists and doctors in the BMJ which say they are fine, and instead looking at links by agriculturalists?

I’m actually fine with not eating eggs if that’s what the science says. But that’s not what it does.

We should all eat less animal produce for environmental reasons. But please let’s not mix up the science on nutrition, it’s unnecessary

Look I get it. You really want to feed your kid eggs. It pissed you off that I said they are bad for you.
Now I have to be the Jesus christ of egg awareness lol, because you don't want the inconvenience of finding out if I'm right or not.

OP, let us know how you get on with the egg in porridge, if it's good I'll try it myself - I love both eggs and (salted!) porridge, but can't imagine eating them together.

I don't know of any health risks associated with eggs. I used to love them, but the egg industry is barbaric so there's another good reason not to eat them if the health risks don't faze you

Egg in porridge is food of the gods. Seriously.

Cook the porridge as normal (microwave/saucepan). Beat egg in big bowl. When the porridge is cooked, temper the egg before adding it to porridge (ie stir spoonfuls of warm porridge into the egg, don’t tip the egg in to the porridge or it will scramble). Few spoons of porridge in the egg, well mixed. Then tip the egg/porridge mixture back into the rest, stir well and cook for a minute or two. Thickens up beautifully. No eggy taste.

Lol egg yolks are high In cholesterol but it doesn't have the same effect of cholesterol in the blood the same as other saturated fats. Do your research properly before coming on here and trying to preach.

Eggs are a great source of protein. I feed my LO an omelette for lunch at least every other day - with spinach, mushrooms, broccoli, tomatoes or herbs mixed in.

In between, we do eggy bread, savoury egg waffles, eggy sweetcorn fritters or egg veg muffins, as well as the pancakes.

Didn't Eggwina Currie have an embarrassing incident with misrepresentation of eggs back in the early 90s? Or was it the late 80s? I don't eat eggs because they make me feel sick but I'm now worried that NOT eating them might send me cuckoo.

Tell me more OP about porridge ideas please for a fussy adult who is a golden syrup on porridge addict but wants to be healthier. Can't have lots of bananas for health reasons but I love them sliced on porridge with syrup..

My son has inherited my porridge mania. I'll have it with anything.

Favourites are:

With apples stewed in brown sugar and cinnamon (brambles too when we pick them in the autumn). Basically an apple pie porridge. The healthy version for toddler's sake is just to cook it with grated apple and cinnamon 🥧

Peanut butter and strawberry jam 🤤

Sugar and lemon 🍋

Sultanas, mixed seeds and Nutella 😁

Sultanas, grated carrot, cinnamon and sugar for a carrot cake porridge 🥕

Blueberries are divine in porridge but you have to put them in at the right time. About half way through. Enough time for them to get warm and jammy but not too early or they burst like lava in your mouth and ruin the experience 🫐

If I'm feeling absolutely mental I'll make it with gold top milk and sugar 😬 I've even had it with a dollop of jam, sliced strawberries and clotted cream. Like a porridge cream tea!

My porridge is only healthy when I'm eating it with my son 🫠 My husband smiles, bemused and says "just a pinch of salt in mine please", the psychopath.
