Morning all.

It seems that this Jubilee weekend has been more than a challenge for many of us. But it's over now! So let's all climb quickly back onto the LC wagon.

We have three weeks left, so still plenty of time. Certainly to undo the damage of the last few days!

If you have been struggling, or have cheated, why not go back to strict Bootcamp for a week (or two, or three)? Make sure you really are eating plenty of fat, drinking all the water and getting your carbs mainly from veg and salad.

Next week is going to be hot - especially Friday - so the next challenge I'm setting is to find your best salad.

Here's mine - it's actually from a book called The Low-Fat Gourmet, by Caroline Waldegrave, and one of a series of books that Sainsbury's published back in the 80s. The fat content for the recipe is given as 13g, but I increase that by frying the steak to start with.

Fillet of beef salad

serves 4

Ingredients

175g fillet steak*
Worcestershire sauce
1 small cauliflower
175g broccoli
250g cherry tomatoes
125g french beans, topped and tailed

Dressing

3 tablespoons grapeseed oil **
1 tablespoon good quality wine vinegar
1 teaspoon Dijon mustard
1 teaspoon grated fresh horseradish *
1 garlic clove, crushed
1 tablespoon fresh chopped chives
salt and freshly ground pepper

*doesn't have to be fillet - you can use a cheaper steak, as long as it will be tender when seared/cooked very briefly

** I use extra virgin olive oil as that's what I always have to hand!

* I use a teaspoon of horseradish sauce, as nowhere I shop ever has fresh horseradish!

Method

  • Trim the steak and sprinkle it lightly with the Worcestershire sauce, then dry fry it for a total of six minutes, then leave it to get completely cold. Depending on the thickness of your steak you may need to fry it for a shorter time than this - the idea is that it's seared on the outside but still pink in the middle
  • Cut the cauliflower and broccoli into florets and then cook them until they're half-tender in boiling, salted water. Refresh them under running cold water, and drain them well
  • Wash the tomatoes
  • Cook the beans for two minutes; refresh them under running cold water, and drain them well
  • Mix together the ingredients for the dressing, except the chives.
  • Cut the steak into strips the size of your little finger, and mix with the vegetables. Add the dressing and half the chives and stir gently.
  • Pile into a serving dish and garnish with the remaining chives
Don't make this more than 30 minutes before serving.

Oh, and the other change I make is to use more meat than the recipe states - the quantity given in the recipe is c. 44g per person, which is (I think) too little, although presumably this is also a way to keep the recipe lower fat.

Hello everyone, hope it was a good weekend

@venusandmars you don't fancy a pub salad with that... aka opened out packet of crisps with some peanuts sprinkled on top

B: scrambled eggs with cream, avo, tomato and coriander salad
L: wasn't hungry, had about 5 hazelnuts and creamy coffee
D: fathead pizza with artichoke, red onion, pepper, olives and basil. It was OK... I don't think it was a nice as everyone else's pizza from the pizza oven but not bad
Have 500ml water left to drink will get through it later
Might have a square of lindt 90% later if I fancy it

A reasonably good day today, I think, after my victory in the scales department (I have to remind you all in case I'm back up tomorrow for weigh day!!).

B - 2 bacon, 2 eggs, 2 mushrooms, 1 tomato.
L - goats cheese salad (baby leaves, cucumber, olives, vinaigrette).
D - 2-egg omelette with leeks and cheddar. 2 tsp clotted cream and 5 raspberries.

Has anyone else noticed just how much they used to eat? I have realised that I was often eating far beyond the point of satisfaction. I was satisfied tonight by 2tsps clotted cream. In the past I would have had a couple of scones with 2tsp clotted cream on each (and butter!).

Fluids....lost track a bit. 1 cup of tea, 300ml water, 3 or 4 750ml bottles of water so far but can't remember which? I've decided to just crack on and keep drinking!

Told you all! I'm up 0.8lb today on yesterday!! Seriously! I'm being completely honest and recording 142.2, but I know the scales said 141.4 yesterday 😋

Morning all, it's been a rather busy week here and I've only just managed to catch up with the thread. I've put on another 0.9kg after my loss last week but haven't had the best week in terms of eating , particularly in terms of water intake! I'm going to knuckle down this week and concentrate on water intake. I also forgot to weigh first thing so this weight was taken after I'd drink half a pint of water (cos, trying to increase water intake!) 😁

I'm a pound up today but the general trend is downwards. I ate (burgers and salad) late in the day that I'm blaming that for the faux gain. I need to do some serious meal planning as I've got a super busy week coming up. Salads will be a great theme!

Waist still 5" down from Easter. I feel a bit bloated so happy with that.

I lost what I gained last weekend plus another ok butter so 4.5 this week
I started back in April and have lost 11.5 lb since then .
sometimes when you are sts , up a little , then down a touch you can forget the overall trend is down . Koko

Morning everyone.

STS this week which is frustrating as its a 5lb heavier than i was on Friday and represents the particular challenge I have with weekends at the moment. I did well this weekend until yesterday - my healthy planned meals at home were swapped unexpectedly when we ended up eating out and I made a series of poor choices. I need to crack this though.

I'm back on it again today. I had already planned a 46 hour fast from 7pm tonight and the preparation is important so I need to make sure I eat enough protein and fat, and drink loads of water.

B- black coffee
L- 3 egg buttery omelette, avocado, salad
D- roast pork, vegetable tray bake with lots of olive oil, chocolate & clotted cream.

Well done everyone on their loses.

@venusandmars I am impressed beyond words with your great choices yesterday, you put me to shame!

@Lougle well done for putting down today's weight, I sense that this represents an acceptance of the fickleness of the scales that isn't easy. I also find it amazing how satisfying smaller amounts of high quality food are compared to the endless amounts of sugary carbs that are never enough. I know we definitely eat better with this WOE but I think we probably also spend less even though we buy alot of meat, good cheese, butter, cream etc. When I think how much I used to spend each week on diet drinks, crisps, biscuits, cakes, etc!
