Summer Low Carb Mini Bootcamp - week 2

Morning and welcome to week 2

I'll link to the spreadsheet in a comment below

Fingers crossed everyone's had a great week weight wise and that week 2 brings a break from the rain for most of us!

Please remember when you get on the scales this morning/tomorrow morning, that some people lose weight much quicker than others.

If you have a lot of weight to lose, chances are that you will lose it quicker than if you are closer to your target. Some people will lose a shed load in week one, but then nothing in week two - whereas others will lose more modestly, but consistently, week after week. The only thing that matters is what is happening to you.

If you haven't lost much, please don't be disappointed. Make sure that you are genuinely following the rules - are you drinking enough water? Are you eating high fat? That one glass or wine, or that small piece of cake - they all add up.

And even if you have genuinely followed the rules - if you haven't seen the scales move by much - have you measured?

We are all different, and rates of loss will be different too. Just think about the food that you have been eating, and consider how this WOE compares with low calorie or low fat diets.

Changing to a low carb way of eating as compared to a low fat or low calorie diet is not an easy transition, and it is to be expected that there will be snags along the way. Hopefully the Bootcamp threads will give you the help and guidance that you need - and I hope that when you get on the scales next, your hard work will be rewarded!

(thank you for the motivational words @biwi Smile )

Well done @TidyDancer that’s a brilliant loss!

I weighed this morning and am down 1lb, but I am on my period (not sure if that makes a difference) also I’m going to a wedding party later on & not sure what the food options will be so may end up eating a small amount of carbs which might negate that 1lb.
I am keeping the mindset of no loss expected in wk3/4 & KOKO

TidyDancer · 14/08/2021 13:05

Thank you @Kerplunkk! 🙂

HarrietDVane · 14/08/2021 13:37

Well done @TidyDancer!

I weighed in today as well (Saturday is my normal weigh day) and I'm 1lb down. Progress is slow now for me but it's still progress. KOKO and all that.

Ended up having takeaway yesterday rather than the keto chicken curry I had prepared. DH is feeling wretched watching what is happening in Afghanistan and feeling like his tour of duty was a waste, so he needed a pick me up. We had Turkish food though so I kept it low carb, with lamb shish and salad.

Today:

B: berries, Greek yog and keto granola
L: chorizo omelette and salad
D: the chicken curry and cauliflower rice that we didn’t have yesterday

PastramiNoRye · 14/08/2021 13:53

On our hols so went for a big walk.

B: eggs, bacon, mushrooms and avocado
L: chicken and cucumber roll ups with mayo and creamy coffee
D: Chicken curry with spinach and paneer on the side.

PastramiNoRye · 14/08/2021 13:53

Great news @TidyDancer! That's the best part of a stone!

pinknsparkly · 14/08/2021 15:50

Sorry to be a bit stupid, but at the suggestion of the wonderful @venusandmars, I'm meal planning for a much reduced dairy week next week. My lunch for the past two weeks has pretty much been a cheese (plus egg or avocado) salad every day! Can anyone throw some suggestions at me for what they would put in/with salad for a packed lunch? I've got hard boiled eggs, avocado, tinned tuna and tinned sardines in tomato sauce (I know the tomato sauce isn't ideal, but that's what I have in cupboard and no one will eat them if I don't!).

TidyDancer · 14/08/2021 15:52

Thank you @HarrietDVane @PastramiNoRye 🙂. I feel like this WOE is sustainable long term which is even better!

FusionChefGeoff · 14/08/2021 17:25

@pinknsparkly - How about hot smoked salmon salad that's one if my favourites. Or chicken and bacon and avo Caesar yummy.

I'm doing salmon tonight and fancy a creamy sauce - I lhave double cream and a lemon (!) so do I just heat the cream and squeeze lemon in or is there a more advanced version?!

HarrietDVane · 14/08/2021 17:43

I warm up the cream (even tastier with spinach in it) and then pour it over the salmon, bake for ~20 minutes or so and then squeeze over the lemon juice just before serving. I also add a handful of cherry tomatoes to the bake as it gives it a bit more of a zing.

venusandmars · 14/08/2021 18:19

@ZiggZagg if you're fasting for the whole day and only eating once (even if it's accidental) make sure you're having enough - especially plenty of fats and oils. Otherwise you risk feeling hungry and I know that that leads me to make poor decisions or give in to temptation of the wrong sort!

@pinknsparkly slices of salami, slices of chorizo, pate (of various types - chicken liver [make your own including cream and butter and brandy ] or mackerel or crab or anything mixed with mayo). And don't forget that for a nice snack you can spread pate onto cucumber, or use it to fill a lettuce leaf, or put it in the centre of a stick of celery... And if you're buying pate make sure to read the label for the carb content.

@HarrietDVane your salmon recipe sounds delicious.

ZiggZagg · 14/08/2021 18:41

I know @venusandmars it was just yesterday and felt like that was all I needed. I wasn't hungry following it but did have mayo and butter on the sandwich Smile

FusionChefGeoff · 14/08/2021 21:31

@HarrietDVane thank you but unfortunately one DC would have objected to that so I needed a 'side sauce' Grin. Ended up pouring juice from salmon parcel into pan, adding splash of white wine then cream, simmered (ahem, may have been a bit of a boil moment when I got distracted!) and then added S&P, fresh parsley and 1/2 Lemon juice. It was bloody lovely.

L: ham and cheese with mayo slices
D: salmon with runner beans, purple sprouting broccoli and roasted courgettes with the above lemony sauce. Divine and all veg from the garden!! DH and kids also had garden potatoes.

Very pleased with my Day 1 Smile

Kerplunkk · 15/08/2021 09:56

Well the wedding wasn’t a total disaster food wise,
Did have a small amount of rice & some humous but the rest was BC friendly.

recreationalcalpol · 15/08/2021 10:08

Just put on a size 10 skirt, and it fits!!!! Granted, it’s from M&S so the sizing is generous but yaaaaaaaaaaay!!!

It was so lovely yesterday to go for a day out with my family and hold my 14 week old knowing that I’ve lost all the baby weight that I gained over two pregnancies. Still a stone to go to get to pulling weight - KOKO!

Daveggie1 · 15/08/2021 11:37

Leapt off the wagon last night after a rubbish day to end a rubbish week.
Felt foggy headed and headachy the last few days on top of working crazy hours and looking after the kids alone again all week. Felt really low and felt like a takeaway might pick me up and help my foggy head.
I enjoyed it but still foggy headed and headachy today. I was thinking it was the low carb but wondering if it’s something else now, probably exhaustion.
I was worried I might not be able to get back into it today but had my vegan keto porridge for breakfast and feel ok about continuing on low carb for the rest of the week.
I don’t think vegan keto would be sustainable long term, it’s too restrictive and impossible to build in eating out or takeaways. Just want to continue until the wedding we have next month as it’s the only diet that seems to shift the weight for me.

KateF · 15/08/2021 11:54

How's everyone getting on. I'm hopeful for a loss this week. Sunday's my prep day. I boil lots of eggs, make soup and roast sausages and chicken thighs for the next few days.

recreationalcalpol · 15/08/2021 12:54

B: berries, Greek yog and keto granola
L: bunless cheese burger and olives at the farmer’s market
D: lamb koftas, halloumi fries and salad 😋

naemates · 15/08/2021 13:58

I managed to get into a pair of footless tights that I couldn't get on last week!

Okay they weren't comfy so I swapped them for leggings, but it's an improvement Grin

Kerplunkk · 15/08/2021 15:07

@Daveggie1 I’m feeling the same today, my mind keeps wandering to crisps or some chocolate!
Hope you feel better soon

PastramiNoRye · 15/08/2021 15:47

I'm plodding along today!

B: eggs, bacon, mushroom, avocado
L: chicken Caesar salad (7-year-old DD was very accommodating and ate all my croutons as well as her pepperoni pizza)
D: it's our last night of our holidays so probably just finishing off what's in the fridge...there's mussels, smoked salmon, some salad bits.

thelittlefox · 15/08/2021 16:02

Hello everyone. I'm a late check-in-er due to houseguests severely impeding my MN habit over the last couple of weeks. Not sure how I've managed to stick to the plan with the amount of eating out etc but I have so I'm feeling very smug indeed! Lost more than I expected to last week, and I'm fitting into things I couldn't before so feel good about weigh-in tomorrow.

Congrats to everyone on their results so far. I'm definitely looking forward to having a legal gin next week!

Mandate · 15/08/2021 17:13

@pinknsparkly From the ingredients you have mentioned, plus salad, you could have
Nicoise salad minus potatoes
Tuna mayo plus salad
Egg mayo plus salad
(Long term lurker and v occasional poster on these threads!)

pinknsparkly · 15/08/2021 18:37

Thanks so much for the ideas @fusionchefgeoff and @venusandmars! My lunches in a weeks time are going to be much more interesting!! Sadly I've already done the food shop for next week....

@fusionchefgeoff - did you manage to get your sauce to thicken up? If so, how? Without being able to use flour, I can't for the life of me get any sauce to thicken. I've just accepted that any sauces I'll be having while low carbing will be the consistency of water or at best, cream! I have simmered and simmered and simmered and it's never thickened like the recipes tell me it will Sad

pinknsparkly · 15/08/2021 18:39

Thanks so much @mandate - your suggestions will liven up my lunches this week!
