Morning and welcome to week 2

Fingers crossed everyone's had a great week weight wise and that week 2 brings a break from the rain for most of us!

Please remember when you get on the scales this morning/tomorrow morning, that some people lose weight much quicker than others.

If you have a lot of weight to lose, chances are that you will lose it quicker than if you are closer to your target. Some people will lose a shed load in week one, but then nothing in week two - whereas others will lose more modestly, but consistently, week after week. The only thing that matters is what is happening to you.

If you haven't lost much, please don't be disappointed. Make sure that you are genuinely following the rules - are you drinking enough water? Are you eating high fat? That one glass or wine, or that small piece of cake - they all add up.

And even if you have genuinely followed the rules - if you haven't seen the scales move by much - have you measured?

We are all different, and rates of loss will be different too. Just think about the food that you have been eating, and consider how this WOE compares with low calorie or low fat diets.

Changing to a low carb way of eating as compared to a low fat or low calorie diet is not an easy transition, and it is to be expected that there will be snags along the way. Hopefully the Bootcamp threads will give you the help and guidance that you need - and I hope that when you get on the scales next, your hard work will be rewarded!

Can you guys help me out with some food ideas for my night shifts this weekend, I'm so bored of eating salad at 1am. Got to be easy, quick to eat and not stinky. Thanks

That sounds delicious Daveggie1 especially with the cauli rice and celeriac chips.

@Jollyholibobs Japan is one of the places still on my list to visit - maybe sometime in the next few years.

Food today:
Brunch - cheesy spinach from here
Dinner - chilli chicken thighs with asparagus, cabbage, broccoli (in butter)

Tomorrow I'm going to a wedding so brunch will be the left-over chilli chicken and veg, and the wedding breakfast is: goats cheese salad; then chicken with parma ham, mascarpone, roast tomatoes, red pepper coulis and salasa; then cheese (no biscuits) celery and walnuts. It helps that the bride's Dad is low carbing and I think he had a hand in choosing the menu Grin

The cheese and almond muffins? Buy the Seriously Low Carb rolls — they are really good,. I buy them to take to sports events with ham, cheese and butter

@ditavonteesed I agree with the cheese and almond muffins - even better spread with butter and peanut butter; or filled with cream cheese, smoked salmon and cucumber; or cooked chicken and some roasted peppers (from the deli counter).

I also make meatloaf for eating cold (with a bit of salad though!) the recipe is on page 5 of the meat recipe thread - posted on 5th February 2021 It is so tasty...

And in a similar vein - mini lamb meatballs (lamb mince, shallot, parsley, feta, egg) with a spiced yogurt dip (greek yog, finely chopped red pepper, sprinkle of chilli, chopped chives). Take also cucumber, celery, carrot batons to dip in the dip.

Actually, just as easy for me to copy and post it the meat loaf recipe here Grin
Meat Loaf Recipe (for eating cold) It was a recipe that I made in 1970 when I was doing my Guide Cookery badge, so the original was in lbs and oz...

Ingredients
500g minced beef
250g good quality streaky bacon
2 shallots, finely chopped
50g ground almonds
2 eggs
big handful of chopped parsley
seasoning (generous amounts of salt, pepper, nutmeg, and a 1 tsp allspice)

Method
Use half the bacon to line a loaf tin (across the way, and up the sides), with 3 slices reserved for covering the top)
Finely chop the remainder of the bacon, place in bowl with all the other ingredients.
Mix well.
Press into the bacon lined loaf tin.
Cover with remaining rashers of bacon.
Cook at 180 degrees for about 1.5 hours - check after an hour, and then each 15 minutes to make sure it is not burning.
Run knife round the edge, leave to cool then turn out.
Cool in fridge.
Slice and eat cold.

I don't know why not. Our weight fluctuates all the time so maybe it won't be the same tomorrow, but step by step and by sticking with the rules there is no reason why you won't go even lower.

I don't know how long you've been following a low carb high fat way of eating. I do know that for anyone who is used to the classic low fat / low carb approach your statement is all too true, a weight loss that feels hard or impossible to maintain. But this approach is different. My weight has never been so stable.

Started at 166lb and will be happy to stay under 150lb

I've disappeared due to various holidays and shocking signal in campsites but have begrudgingly paid for WiFi to check in with work - so I can also catch up!!

I successfully navigated 2 out of 3 holidays with only a very minor cheat - and for the first 4 days of this last camping trip it was all groovy but did involve a LOT of soggy salad pack ups!!

So then I mindfully threw myself off the wagon for 3 days due to some genuine reasons (1 dinner option would have been a plain meat patty and nothing else suitable in the menu) and some definitely NOT genuine reasons!! I only had 4/5 chips with my fish and chips on the beach which I was pleased with considering.

It's been harder to keep up on the water too - frustratingly one of the seaside towns we went to had a huge exhibition about plastic waste - and no public water supply so plastic bottles were the only option Hmm. Plus the uncertainty around toilet facilities!

But today should be back on it and then we're heading home tomorrow where I will gleefully embrace a return to BC living.

B: fasting out of excess!!
L: Courgette frittata thing
D: steak, chicken kebabs and salad

I won't be weighing for a while to give myself time to even out Smile

Ate far too much yesterday. I had a day off and was feeling uncharacteristically low so succumbed a bit to emotional snacking - cheese and 90% dark choc.
Meals were ok - eggs for breakfast, feta and spinach salad for lunch and home made burger with salad for dinner. But 3 coffees with cream and only one litre of water too.
No idea what was behind it, an accumulation of things I think.

I feel a bit better today - we’re going to go and visit the local Wildfowl and Wetlands sanctuary in a bit and feeding the ducks will cheer me up.

I have had a mini breakthrough!
Making the Dc pancakes with Nutella, I had a teeny tiny bit off the end of the spoon…..and I didn’t enjoy it at all, it was way too sugary!
I usually would’ve eaten a few spoonfuls Blush

Off for a long weekend tomorrow before the schools go back on Wednesday (hallelujah)!

Just been to the supermarket to stock up on low carb dinners. DH is very on board with this WOE so nice to have his support!

Today:

B: scrambled eggs and avocado
L: Gouda and salami roll ups plus creamy coffee
D: chicken curry with spinach and paneer on the side.

Took toddler DS and baby DD out to stay and play and then lunch today. Managed to find a cafe doing charcuterie plates Halo

B: berries, Greek yog and keto granola
L: charcuterie plate. Kudos to my 2 year old for taking one for the team and eating the bread
D: going to do salmon in a creamy lemon garlic sauce. DS will have it with rice, I’ll have asparagus and some salad bits.

I took my little to soft play this morning, with no time for breakfast for me before going. I packed food for her but none for me. The options were essentially smoothies, coffees, chips, pasta or sandwiches. So I ended up with a flat white coffee, a babybell and the uneaten cucumber I'd packed. I found a 50g pack of mixed nuts in the car before driving home. So not the best lunch but it could definitely have been worse! I then had a second lunch/afternoon snack of cheese and a coffee with double cream when I got home.

Dinner is pork chop with frozen mixed veg (I know that's not ideal as it does have some carrot in it, but we really need to eat out the freezer. I've eaten all the lower carb veg and my husband has barely made a dent in the mixed veg Grin)

I've been terrible and didn't post on thread 1 at all. Had an absolute mare of a fortnight so I haven't been very good at the bootcamp. However, I have managed to get a kilo off which is quite heartening. Going to try not to wreck the progress!

B: a sort of cold porridge chia pudding thing, BC light only- 1tbsp each chia, flaxseed, ground almonds, dessicated coconut, mixed seeds, bit of almond butter, few frozen berries, milk. Nice for a change and very nutritious but won't help with weight loss like a couple of eggs would have!
L: cheese mushroom omelette
D: cheeseburger pie and lots of sautéed spring greens. Last of the clotted cream with a few raspberries.

Lowest Weight this bootcamp today, 2lbs down from my starting point; after poor commitment I'll take that and try to stick with it for Monday! DH away tonight and some of the weekend which often makes it easier to just clean up and "close the kitchen" though might eat out with DS at some point. About 5lbs to go.

Did the first yoga for a couple of months today having been almost daily during lockdown and it felt good to be back on the mat.
