We had this recipe for dinner tonight:

All ingredients could be bought at Aldi, so not expensive. Husband and teenagers liked it a lot. They had rice on the side.

Everyone said they would like it again. If I make it again, I’ll add more broccoli.

It was low in carbs, but did have quite a bit of dairy.

There’s a UK recipe book called Keto Kitchen by Monya Kilian Palmer on kindle for 99p at minute - I had it recommended to me so thought I’d share.

So hang on, we have pigs chickens and sheep owners all on this thread?

I was so tired by the time I got in that I had zero energy to make cauli pizza but I may try again this weekend.

Did make courgette fritters though, not as nicely as that yummy looking recipe suggests though! Just grated a courgette, added two eggs, a handful of grated cheddar and dollop of sour cream and that worked out nicely. Also had celeriac chips with a bit of grated Parmesan and a dip made from crème fraîche, horseradish and mayo.

Rest of the day I had avocado and halloumi, chicken liver pate which I am totally over indulging in and celery.

Def not enough water though - can’t rectify that this morning as have to go to play ground but will this afternoon.

What was Promising Young Woman like, pp?

D: chicken and veg

Just off for a run, and out this morning to the beach with DS and a friend for a (black) coffee. Lots of walking planned!

@Thinnerlikeachickendinner here you go. I was seriously sceptical but it 100% hit the spot. I love tuna / olives / peppers and onions as topping.

I've not done the mushroom / flattened chicken or cauli bases though so don't have a comparison.

I'm off on a long run then seeing friends for a picnic. So I'm taking green soup with cream in a hot flask and my last SLC roll with cheese. It's a final test to see if the gluten fibre gives me stomach cramps as I suspect which is why I say 'last' roll.

Dinner tonight is an Aldi chicken kebab thing with homemade coleslaw, wedges and sweetcorn for the family and I'll have mini sweetcorn, mushrooms and might try the celeriac / chorizo thingy posted last thread if I can find it!!

Hotgotthetrots coconut oil in coffee is nicer than you might think, that's why the keto/Bulletproof crowd all rave about it. But no need to try it if you have alternatives on hand. Constipation is common in the first week or two of cutting carbs because we flush so much water initially but it will settle down very quickly.

Timetobuckup if you have a bad taste in your mouth then brushing your teeth and/or mouthwash might help. My grandmother used to chew cardamom pods but I think that sounds horrible! Make sure you're getting enough water as that will dilute the ketones that are causing it. You will probably find it goes away anyway when we're on to Bootcamp Light and your carb intake is slightly higher.

OnceUponAMidnightBeery any diet can cause hormonal fluctuations since a form of oestrogen called estrone is stored in fat cells. It can take a cycle or two for your hormones to get back to normal. Possible effects are: mid-cycle bleeding; return of periods after menopause (keep an eye out if this happens as it can potentially be a sign of serious illness); breakthrough bleeding on the pill or the coil; etc.

I'm off out to a National Trust place today so I have cheeseburger pie, salad, coleslaw and a mini pack of olives for my lunch. I'm looking forward to it already! We're booked in to the local pub today which is DS1's first trip to the pub since he turned 18 in January. I'm not sure what to have. I feel that I should have something relatively pricey seeing as they've only just reopened I can't sit there drinking tap water! Are there any expensive alcohol free but low carb drinks?

Am really intrigued by this cheeseburger pie - is this a bit like the American keto Big Mac casserole (casserole in the American sense, so different from U.K. !). I might make that next week, looks kind of yum.

We tried to pop to the pub to on a bike ride last night but no room, so avoided the sulk at no beer for me!

I made some chicken liver pate last weekend I've been enjoying on celery when I've wanted a snack.

Very interested in the idea the diet may have caused my very unusual breakthrough bleeding; I'd put it down to inadvertently missing a pill at some point earlier this week (despite that not usually triggering it) I'd run two packs together so just decided to finish a week early and have my period now. I didn't think this was that big a departure from normal for my body; I'm eating my normal meals just with no nuts or wine, but also I suppose none of the extra crap I sneak in or off plan meals!

Morning all.

Feeling rough with a headache. Sure it's not low carb related as been doing this for a while, probably more hormone related.

Ate lots of cheese last night as we are away on holiday and I wanted a treat!

Plan for today:
Egss of some kind this mor ing
L feta salad, garlic sausage, crudite (picnic)
D meatballs and courgetti. Probably a mad amount of brie too.

@Thinnerlikeachickendinner this is the cheeseburger pie recipe I use - there are lots of variations around. Easy and yummy, we have it most weeks!

500g minced beef
50g finely chopped onion/shallots
150g chopped mushrooms (and other veg if wanted)
150ml double cream
2 heaped tablespoons of mayo
150g (or more!) cheddar grated
3 eggs
salt & pepper

  1. Fry mince, onion and mushrooms together until cooked, season to taste, add generous splash of Worcestershire sauce
  1. Place in a casserole/pie dish, flatten with spoon. Optionally add chopped gherkins.
  1. Beat eggs and then add mayo, cream and cheese
  1. Pour over the top of mince and bake in oven 180 fan for 20 to 25 mins until set and golden

Just decided I'm going to track my water today seeing as it's BC proper. I don't normally bother at the weekend but I imagine I also rarely drink enough so really should! Hitting town with the toddler later Confused so I guess I'll need regular trips to the loo anyway!

Thinnerlikeachickendinner the cheeseburger pie is like quiche with a burger base. There are lot of variations to the recipe. Someone suggested adding veg such as carrot and celery to the base. Someone else suggested jalapeños (very nice when it's served hot.) I add sliced bell pepper into the topping. I find you get a better result if you sprinkle the cheese on last rather than mixing it with the rest of the topping ingredients.

I took the kids to Battle Abbey to learn to ‘fight like a knight’ yesterday, which was brilliant fun, but bloody freezing. I sat on the grass for 2 hours then another hour in the playground and our 3rd picnic in 3 days. And, while I made a lovely salmon, green bean, asparagus and purple sprouting broccoli salad with a pesto dressing (1tbsp each of pesto, lemon juice, oil and Mayo) I would have much preferred some hot soup. Then we went on to Hastings for a walk and another hour on the beach. I was thoroughly cold by the time we got home. I did cheeseburgers and green salad and coleslaw (bought) because after a big day it was quick, (and the kids eat burgers too so only one meal to cook) but again, I really could have done with a hot chunky casserole.

I have spent so many cold/wet/muddy days in parks and woods the last 6 months I’ve taken to just browsing warm and dry holiday destinations and pictures of sunny beaches. H thinks I’m bonkers, he keeps saying ‘why on earth are you looking at that?’. I’ve decided when we are allowed I’m leaving the children with my mum and going to Palma for a long weekend. (I’m not sure it will actually happen but it’s keeping me going)

Today I’m doing a beef shin casserole in the slow cooker as were going to the local country park and playground for the afternoon (after lunch so not another picnic thank god). So it’ll be ready when we get back and need warming up.

I also love eggs Stuntnun on the way home yesterday we stopped at a farm to by 30 eggs for £6! What a bargain. Can’t wait to have them for breakfast, possibly poached on buttery mushrooms and spinach. Not quite sure yet.

@ouchmyfeet don’t be so hard on yourself. You have done so well so far. I never tell anyone I am trying to lose weight either. I just feel embarrassed. I have realised how many social events are normally planned round food and drink. I need to change that. If alcohol is a trigger why not try abstaining for a month and see what happens. Just tell everyone you are having a dry month - it’s the height of fashion. Keep smiling and keep posting. I have discovered if you make yourself smile you do actually feel better. Try it

I love all the livestock chat, it’s like my own personal country file. My best friend had a cottage near Bala and all the sheep and lambs I’ve encountered seem to have a death wish. Just aimlessly running in front of cars and getting heads stuck in fences - we were often rescuing them when there.

Good call Newlook I'll see if the pub has any non-alcoholic, but still frightfully expensive, gins! I do like Seedlip Spice but not the Grove one which tastes like grass smells.

My in laws used to live opposite a sheep field and they were always having to go out to lift up a sheep that was on its side and couldn't get up. They do seem to be rather stupid creatures. Taste good though! Wink
