Some great losses already posted, so well done.

But don't despair if you haven't lost as much as others. Remember, this isn't a competition. We're all here with different startpoints, and everyone loses at a different rate anyway.

Really enjoying reading everyone's contributions. Thanks for all the tips about getting through the weekend too.

Looking forward to learning more about roasting radishes. Do people use olive oil ? How long and what temperature please ? Also do you cover them with foil to start?

I want to premake the cauli cheese and reheat when they get here (prepping now, they come at 3.30) is this possible? I've only ever done this with the "traditional" flour and milk base before. I find the cream tends to go very think once sat for a bit?

Jumping on the roasted radish bandwagon with tonight's pork belly after a trip to Sainsbury's. Loads of veg in and aiming to finally empty the freezer ready for defrosting next weekend. Would love a new one but struggling to find one that will fit in the gap, let alone one that is the right size and actually in stock.

Swimming later but behind on the water so will get on that!

@stuntnun now I realise why I was troughing on parma ham before we went out at 9.45am. My body thought it was almost 11am AND I'd been awake since 5am!

@Takingontheworld I have those scales too! Bought them for the first day of bootcamp and really like all the data and the little upbeat noise the app makes when it takes your weight 😂

Excitedly planning a dinner of cheeseburger pie for tonight- but can’t find the recipe- could someone ping up a link, or, better yet, post it on the meaty thread, please.

Cheeseburger Pie
Total carbs 9c. Serves 4
Ingredients:
500g minced beef
50g finely chopped onion
150g chopped mushrooms
100mls double cream
2 heaped tablespoons of mayo
150g strong cheddar grated
3 eggs
salt & pepper to taste

Fry mince, onion and mushrooms together until cooked season to taste, drain off fat, add Lee & Perrins sauce.
Place in a greased foil covered deep pie dish, flatten with spoon.
Beat eggs add mayo, cream and cheese.
Pour over the top of mince, drop olives around the dish and bake in oven Gas mark 5 for 20 to 25 mins until set and golden brown.
Leave to cool before taking out of pie dish, remove foil.
Cut in to portions and wrap in cling film
This freezes very well.
Lovely with salad, cauli mash, or stir fry (Great in lunchboxes)

Optional 1 Tablespoon Lea & Perrins 2c and 10 black olives

I would never cook with mayo, I always thought that was something you should never heat up from a food safety perspective? Can all of the many of you who've made this confirm it's fine, you're all still alive and it's an essential ingredient?! I'm pretty lax on food hygiene but I thought that was a hard and fast rule?!

I’m not sure what ingredients in mayonnaise could possibly be problematic to heat- I think you’re in more danger from it in its natural state, if home made, due to the egg.

Rayna37 I made fishcakes from the recipe thread last week, the mixture (which I pan fried) had mayo in it. Never cooked with mayo before either but I am still here, didn't experience any ill effects.

I guess it could be an issue if you just warmed it through- and didn’t cook it thoroughly? This recipe should be fine, though.

I've just done something utterly filthy, but blimey it was NICE. The toaster ended itself earlier this week so the panini press has been brought into temporary service. (Man alive, it was the shittest toaster ever, but I digress) I experimented with thin slices of chorizo topped with thin pieces of cheese and popped them on the press. Mine is such that I can make the lid not touch the contents IYSWIM (Breville). Oooh they went crispy and lush. About to make a second batch with a drop of truffle oil on the top

That's the original recipe, but I have no idea (given that it's from a low carb site) why it says to drain the fat from the mince! I never do that - no need.

Also, to make it more low carb, replace the onions with shallots.

@Rayna37 no issue with using the mayo - you might be right to be worried about mayo in its raw form, given that it uses eggs*, but once it's cooked it's fine.

*although I think I'm right in saying that salmonella has been eradicated from British eggs/chickens these days.

Think about the ingredients in mayonnaise: eggs, oil, sometimes mustard, and vinegar. Would you cook those?

A staple of cyclists is what we call “cycling pasta” which is fusilli cooked, drained, then mixed in with mayonnaise and tinned tuna warmed through. Sometimes we re-heat it on the hob or in the microwave. (Obviously not a low-carb recipe, though could work with courgette spirals.)

No one has died.

Hey everyone , I weighed in this morning and it’s a gain for me - not the 3.5pounds the scales were showing midweek , but a pound-ish gain anyway. I’m relieved to finish this week and start afresh , I might not weigh midweek again either as it put me in a bad mood 🙄 so will try my best and wait for the surprise next Sunday.

I have been self isolating for two weeks and I’ve obviously underestimated how much exercise I normally get - fingers crossed getting back to work this week will get my body going again.

My smart scales are ruthlessly showing 43% of my body is fat and my BMI is 33. I’m 5”1 so there isn’t much hiding from it 😂 just leaving this here for a bit of accountability ... still a long way to go.

I’m enjoying reading everyone’s contributions and menus though , sorry to bring the mood down Grin good luck for tomorrow morning all you Monday weighers Flowers

Oooh I like the sound of this , like a mini cheese toastie without the bread .. ? Will have to investigate !

@prettybird I feel the same as you do about mushrooms, so made the Cheeseburger Pie last week using finely sliced celery instead which seemed to work ok.
