Food that is healthy yet genuinely delicious

So, as we all know most healthy is not as tasty as unhealthy food. For example, carrots = disgusting, but fudge = delicious. I am starting to try and eat more healthily (not trying to lose weight, just want eat more nutritious food). And I want to come up with a list of foods that are genuinely tasty (as in they're so nice that you crave them) and yet really healthy too. I know everyone will have different tastes, but I'm curious to know: which foods do you find are gorgeous but nutritious? Below is my list so far:

smoked salmon
pineapple
smoked mackerel
aubergine
oatcakes
cottage cheese
eggs
EV olive oil

Thai carrot salad:

800g grated carrots (fat side of the grater/grater attachment - outsource this job if you don't have a processor :o)
2/3 mug of sultanas with boiling water to brim for 10 mins
Bunch of spring onions chopped into discs
Medium bunch coriander, roughly chopped
Mint - as per coriander
Finely chopped red chili
2 cloves garlic crushed
Juice of 2 limes
Big glug EV olive oil

Mix everything together and season well. Keeps in the fridge for a couple of days. It's nicest with homegrown or local fresh carrots as it's sweeter.

Thanks Dowagers. That looks yummers. Will try tomorrow. Interesting about the cholesterol. It seems counterintuitive really as they are a low fat thing but if you can't absorb it, maybe that's why (I don't reallly understand cholesterol very well but remember reading something about shellfish not working for people on low cholesterol diets.)
