Food that is healthy yet genuinely delicious

So, as we all know most healthy is not as tasty as unhealthy food. For example, carrots = disgusting, but fudge = delicious. I am starting to try and eat more healthily (not trying to lose weight, just want eat more nutritious food). And I want to come up with a list of foods that are genuinely tasty (as in they're so nice that you crave them) and yet really healthy too. I know everyone will have different tastes, but I'm curious to know: which foods do you find are gorgeous but nutritious? Below is my list so far:

smoked salmon
pineapple
smoked mackerel
aubergine
oatcakes
cottage cheese
eggs
EV olive oil

For me it's
Red grapes
Seedless satsumas
Rocket salad
Raw yellow/red/orange peppers
Strawberries
Raspberries
Watermelon
Pomegranate seeds

On the other hand I just had some cream egg ice cream and MAN it was good Grin

My favourite salad is basically everything I can lay my hands on that's fresh and healthy thrown on a plate. This lunchtime's consisted of:

Sugarsnaps
Mangetout
Fine Beans
Carrot
Russet Apple
Nectarine
Cherry tomatoes
Cucumber
Celery
Spring onion
Cashew nuts
30g of cheese chopped into small cubes and scattered throughout

Its so tasty that you don't need any dressing, lots of different flavours and textures and it really fills you up.

It depends what we have in, but other food that gets thrown into the mix includes:

Fresh pineapple
Mandarin/Satsuma/Clementine
Conference Pear
Grapes
Various varieties of lettuce, spinach, watercress
Red onion
Avocado
Various nuts and seeds
Beetroot in vinegar and chilli

I sometimes chuck in some spicy couscous as well for a bit of extra spice.

ooh, Fisharefriends you just reminded me I love eating those long red pointy peppers raw. So sweet.

Forgot, I always include at least two different colour peppers in that as well.

Depending on the rest of the mix, its nice to have some berries thrown in occasionally - usually strawberries, blueberries or raspberries.

The dcs also love melon of any variety in theirs, but I'm not that keen on melon.

Oh yes, flight, I forgot about porridge.

Love the stuff. Cooked slowly and made with water, finely chopped apple and cinnamon. Its like eating apple pie for breakfast. Grin

I like my porridge made with milk and topped with cream and brown sugar. Your way sounds a little healthier...

I used to love mine like that too, but had to find an alternative when I decided to lose weight last year. I tried it with milk and sugar at Christmas and couldn't eat it.

Oo ... butternut squash, sweet potato and red lentil soup with a few chilli flakes added to give it a kick. Yum ... and it practically cooks itself - if you can ignore the horrid peeling of the butternut bit.

Any kind of seafood. My favourite take away food is Zuppa de pesce from the local Italian.

Grilled steak, baked potato and asparagus. Delicious.

Any kind of fruit, particularly melon and berries.

chickpeas
miso soup
ginger

(have been known to make chickpeas, spinach, garlic all fried up in a nonstick pan with some scrambled eggs thrown in, it's delicious and the DCs like it with pittas).

also have you tried baking chickpeas until they're crunchy? I mix in some herbs/chilli and they are amazing!

Ooh, I haven't tried doing that to chickpeas plucking. I don't like them normally (it's the texture, same with all beany/lentilly type things) but crunchy sounds good. How long do you bake them for? Do you soak them first?
