Food that is healthy yet genuinely delicious

So, as we all know most healthy is not as tasty as unhealthy food. For example, carrots = disgusting, but fudge = delicious. I am starting to try and eat more healthily (not trying to lose weight, just want eat more nutritious food). And I want to come up with a list of foods that are genuinely tasty (as in they're so nice that you crave them) and yet really healthy too. I know everyone will have different tastes, but I'm curious to know: which foods do you find are gorgeous but nutritious? Below is my list so far:

smoked salmon
pineapple
smoked mackerel
aubergine
oatcakes
cottage cheese
eggs
EV olive oil

I had been on a diet since June and been completely cold turkey on refined sugars and high fat when I discovered I couldn't eat my porridge like that. Have since lapsed a lot slightly, so might be able to force some down if I had a go now. Better not though. Grin

I absolutely agree with GrottyPotPlant re organic veg especially carrots.

I had swede mash for the first time the other night, just a splash of milk and small(ish) knob of butter and it was absolutely delicious, I can't wait to eat it again.

Butter and cream should be on the healthy list! They are good for you! Vitamin K, people - abundant in really yellow butter made from milk from cows grazing spring and summer grass.

I am a big fan of black pepper curing many ills. I chuck it on loads of things and they instantly taste better.

Gincognito I am a big believer in real butter and cream but still don't think it should be on my healthy list :)

Although, I've never even heard of vitamin K... Maybe that does qualify them? Anyway, low fat anything and margerine are the foods of beelzebub

Oh sorry! I've seen turkey escalopes covered in breadcrumbs in supermarkets and thought that the breadcrumbs were what made them escalopes! I'm an idiot. Now I see that it is just a cut of meat... Blush

Poke slices of garlic and small sprigs of rosemary into slots cut into a joint of lamb. Cover in foil, oven at 150 for about 3 hours.

1/2lb stewing steak, lamb or 4 chicken thighs. Tin of toms, tbsp tom puree, carrot, parsnip, onion, handful of pearl barley. Bung in ceramic casserole, top up with water or stock, chuck in relevant herbs. Oven at 120 for 3-4 hours with a little stir or two in the middle.

Cheese sauce, tuna, sweetcorn, pasta. Contemplating seconds of that but dp will be starving when he eventually gets home and I don't want to deprive him Grin

Homemade cheese sauce: melt tbsp butter, stir in 1.5-2 tbsp flour. Gradually add 3/4 pint of skimmed milk stirring constantly. Melt in 1oz very strong cheese. Stir in a tin of sweetcorn and a tin of tuna.

A lower fat alternative is to switch cheddar for goat cheese and tuna+sweetcorn for peas.

Ooh, good list Pepe. Didn't know about the nairns stem ginger oatcakes, I'm only a recent convert to their plain rough oatcakes. Tasty enough to eat on their own.

Iambaboon was it the steamed pak choi you were after? If so, I steam it in the microwave. I pull the first few larger leaves/stalks off and then cut the heart into quarters, lengthways. Pop in a pyrex dish, couple of table spoons of water and then cling film over the top, pierced a couple or three times. Two minutes or so, maybe three, then add a dollop of oyster sauce (I use the Waitrose one, it is as good as the proper stuff from the Chinese supermarket whose name currently escapes me), give it a little stir, maybe throw a few sliced spring onions in as well.

I can eat so much of this, normally with a little sushi rice and some grilled chicken. Or not. Just eat it out the bowl....

I just pop in a couple of cans (or some chickpeas which I've already soaked and cooked) on a baking tray with a spray of olive oil.

I tend to put mine on a lower oven for longer to get more crunch but just keep an eye on them and see how your oven behaves. I often make them in bulk for DCs and keep them crisp in an airtight container.
I've also done this with green beans (they go brown and scary looking but are delicious, for low carb - taste very chip-like).

Thanks Purple, we do make our own cheese sauce, but it still doesn't get on the list! I'm thinking of food that is so good for you you needn't feel too guilty if you scoff a huge pile of it.
