Food that is healthy yet genuinely delicious

So, as we all know most healthy is not as tasty as unhealthy food. For example, carrots = disgusting, but fudge = delicious. I am starting to try and eat more healthily (not trying to lose weight, just want eat more nutritious food). And I want to come up with a list of foods that are genuinely tasty (as in they're so nice that you crave them) and yet really healthy too. I know everyone will have different tastes, but I'm curious to know: which foods do you find are gorgeous but nutritious? Below is my list so far:

smoked salmon
pineapple
smoked mackerel
aubergine
oatcakes
cottage cheese
eggs
EV olive oil

nam pla - (Thai) fish sauce. Usually found next to soy/mirin etc in supermarkets. Just get a little bottle as it lasts FOREVER.

Yes - Pak choi, I eat it by the truck load. Can get it in the market at the end of my road - ten times the amount of the stuff for the same poundage as the supermarkets.

Steamed with oyster sauce. Oh yeah.

I am actually sitting here in my jams feeling like shit and will now venture down the road to get some.

Properly fresh carrots from a proper nearby farm are a whole different story, flight. They are the food I notice an "organic taste premium" on the most, but I think it goes for veg more widely too. Supersized watery stuff out of season is not going to taste great, but stuff a farmer somewhere (or even better- an allotment holder near you) has loved a bit and looked after vaguely individually, and is fresh and in its proper season, that veg tastes amazing.

My theory is that if I've cooked it from scratch it counts as healthy, because I won't have put as much rubbish in it as a factory. Bring on the home made cake and ice cream!
And if it has a portion or two of veg in, that must have squeezed out a portion or two of something less healthy, right? Hmm.

AND AND proper butter apparently has lots of good micronutrients in which are healthier than marge (in moderation). God I'm the queen of health...

Iamababoon enjoy! You don't need to add cheese, it has feta! You could substitute this for a different cheese, but the saltiness of the feta works really well with the roast veg and tsp of creme fraiche. And yes, a hunk of bread and butter is essential.

Chinese black beans are actually fermented soy beans, not the black beans easily found in cans in Sainsbury's! wiki link
If you have a Chinese supermarket you can get them there.

One tablespoon of black beans soaked in water to cover for 10 minutes, drain & mash.
Fry minced root ginger, garlic & chilli for a few seconds, add mashed black beans. Add meat / fish and cook til just going white. Add 1 tablespoon of Shaosing rice wine or sherry. Add green peppers / whatever veg you like. Cook for a few more seconds. Add some stock & bring to boil until meat is cooked (minutes). Thicken with one tablspoon of corn flour mixed with 2 tbsp water.
Perfect Chinese black bean sauce.

flight the first time I had one I kind of went "oh yes, that's what carrot is all about. Can I have some more now". OH and I had signed up for veg bags from a farm near Reading, and we just sat and ate all the carrots instead of cooking supper. Ahh the carrot moment of discovery

Oh my gosh RedRosie I must get me some asparagus- I forgot it is now!

What about avacado? That is one of my all time favourite things, but it's quite fatty I hear.

I'm trying and failing to eat more healthily this year too and yesterday I had the most amazing lunch yesterday. You won't believe it because it doesn't sound that great Grin :

A small jacket potato that had been in te oven so long that it's insides we're really soft and creamy
A handful of salady leafy type things
A drizzle of a balsamic vinegar/syrup thing.

I was expecting to be really let down by it, but it genuinely was beautiful.

I of course have spoiled m efforts today by finishing off the tub of Ben and jerrys ice cream. Although it was a bit less than a quarter of a tub and it is the only thing I have eaten today...this is why I am fat

I like butternut squash but it is ruined for me by the fact that it is a PITA to prepare, I nearly kill myself every time [weakling emoticon]
