I don't plan a specific meal for each day unless there's a particular reason to (guests, busy evening, etc); I just write a list of meals for the week and decide which one I'm doing on the day/day before.

This week will involve:
home made pizzas
Cajun salmon
jacket potatoes
rack of lamb
tuna bake
Quorn meatballs & spaghetti

  • all with veg, and rice/couscous/potatoes etc if needed

Monday- Jacket potatoes, salad, beans and cheese
Tuesday- Haddock, potatoes, peas and salad
Wednesday-Puff pastry, topped with lettuce, chorizo, cheese, onion and herb sauce then baked in oven with homemade onion rings
Thursday-Sausage Casserole, and dough balls :)
Friday- (DH plays football, so me and DS have freezer night) Fish Fingers, mash and peas.

Tue-Tuna & sweetcorn past
Wed-Jamie's 30 min chicken pie (with wholegrain not english mustard - much nicer)
Thur-Homemade pepper, lentil and chicken soup & rolls
Fri-Jool's pasta (from freezer batch)

Haven't got as far as the weekend yet...

I'm well and truly converted - in fact, addicted - to Jamie's 30-min meals - thanks for all the recommendations!

This week:

Jamie's pizza
Jamie's roast beef
Jamie's Jerk chicken
Spag bol
Some kind of salmon dish
Slow-cooked beef curry
Tuna pasta

i'm a big fan of my slow cooker and as it's just me and DH it's great to cook something and have 4 portions left over so we have healthy ready mealsin the freezer to bung in the oven after being at work all day, then the gym and dog walking. So hence there being alot of 'left over' meals

MON - Left over slow cooked Chilli con carne with rice

TUE - Chicken Fahita with onion, peppers, sugarsnap peas

WED - Left over Kashmiri Butter Chicken Curry

THUR - Sausages with apples and redcurrant/mustard gravy

FRI - Pasta Bake (topped up with sweetcorn n peppers)

SAT - weather permitting BBQ (burgers, sausages, veggie kebabs, tandori chicken usual kinda bbq offerings)

SUN - Left over steak n ale with puff pastry top, veggies, jersey royals

Tues - spanish omlette and salad
Wednesday - linguine with pancetta & garlic and salad
Thursday - salmon, roasted veg & new spuds
Friday- chicken thighs, baked spuds, brocolli, carrots and green beans.

weekend - don't know yet.

Monday: Chicken wrapped in parma ham, new pots, veg
Tues: Thai fishcakes and veggi stirfry
Wed: Steak, chips, onions, pepper sauce and veg
Thurs: Jacket Potato with beans n cheese, salad
Fri: Low fat sausages, mash, onions and veg/beans (whatever i can be bothered to do)
Sat: takeaway
Sun: no idea yet - what ever we fancy night!

Thursday was beans on toast.
Friday was lasagne and garlic bread
Saturday - bottle of wine and large bar of chocolate (involved in car crash in the afternon Sad
Sunday - pork joint done in slow cooker with leeks and apples
Monday - vegetable stir fry
Tuesday - Cajun chicken wraps

Car crash? Hope you're OK.

I went to a pick-your-own place yesterday for courgettes and strawberries, and then their farm shop, so meal plan looks like this:

  • courgette flower and ricotta omelette
  • smoked salmon, creme fraiche and courgette ribbon pizza bianco (no cheese or tomato sauce)
  • duck hash (potatoes fried with a tub of duck rillettes) with green beans
  • roast peppers stuffed with tomatoes and anchovies, with mozzarella.
  • sausages, either with mash or in a beany stew with carrots and onions
