I don't plan a specific meal for each day unless there's a particular reason to (guests, busy evening, etc); I just write a list of meals for the week and decide which one I'm doing on the day/day before.

This week will involve:
home made pizzas
Cajun salmon
jacket potatoes
rack of lamb
tuna bake
Quorn meatballs & spaghetti

  • all with veg, and rice/couscous/potatoes etc if needed

Please share your plan ......

Well hula, you were right. Thanks for that tip. DD1(7) has chosen for next week: ok, yes, burgers (Nigella Express), but also pasta with tomatoes, home-made bread rolls (to make into sandwiches), and baked trout! Not bad - I underestimated her!

Oh and you couldn't post your lamb hotpot recipe could you mummyberryjuice .........? New slow cooker recipes are always good to have.

No problem.

1kg diced lamb
700g onions (or thereabouts) sliced into rings
1kg potatoes peeled and sliced into about pound coin thickness
200-300mls stock (lamb/chicken is best)
50g of butter melted

(If you want to be really traditional you can add a lambs kidney or two chopped into very small pieces - I can't abide organs so I don't)

Put diced lamb into slow cooker. Season. Layer onions on top. Place potatoes on top of onions (arrange decoratively if you cba) pour over stock. Don't overdo the stock, you should just start seeing it come up under the potatoes. Season. Pour melted butter over potatoes making sure you have even coverage. Put lid on and cook on low setting for 6-8hrs (or longer).

About 15 mins before serving, remove lid and place in a preheated HOT oven until top layer of potatoes are browned to your liking. Meanwhile cook veg of your choice.
It sounds sooooooo plain but is delicious.

to serve 4

2 tbsp sunflower oil
