He actually uses a lot of that loose extra skin as crackling at The Hand and Flowers. Scores it up and it fluffs up beautifully with boiling oil. Real snap to it. He's only got a year or so of portions left now though.

Ironically I think the poor guy was trying to sound humble.

OK not a trained chef but knows loads about food via family upbrining, was a Barrister but went to her first love which is food and now has about 20 restaurants.

Such an odd thing to say, given the head chef at The Coach is a woman, and she was head chef previously at the Bull & Bear under his stewardship too.

The sexiest male chef is Matt Ryle anyway. Don't think he does tv or anything but his Instagram is addictive.

Not sexy to me, but his venison madras recipe is delicious.
