I could also do with reading this. I thought a Massive Salad was a substantial 'meal salad' so as well a normal amount of 'salad' and maybe roast sweet potato, it had something like a chicken breast or other protein, plus dip and dressing.

But it seems that it has to have large quantities of every different type of vegetable imaginable plus something like a slither of chicken.

What are all your fridges like? I eat nowhere near the MN recommended amount of fruit and veg and really struggle to get the modest amount I buy into the fridge and there's only two of us.

I can't imagine how big your fridge needs to be to accommodate a week's worth of MN approved quantities for a family.

If so, my fridge is a normal size fridge freezer with 2 veggie drawers in the fridge.

What are all your fridges like? I eat nowhere near the MN recommended amount of fruit and veg and really struggle to get the modest amount I buy into the fridge and there's only two of us.

I can't imagine how big your fridge needs to be to accommodate a week's worth of MN approved quantities for a family.

watercress
tenderstem broccoli
fresh root ginger
1/2 a butternut squash

on the fridge shelves I have a box of
mushrooms
raspberries
strawberries
blueberries
tomatoes

in the veg box (cupboard)
potatoes
onions
sweet potatoes

in the freezer
petis pois
green beans
spinach

Most of the fridge items are used and replaced weekly

Can confirm I have seen recipes for salad with kale (bleugh) that recommend massaging the leaves because kale is tough. IMO if you have to massage your salad into submission before you can eat it you're going wrong somewhere.

I have a large family/household and I run 3 large fridge/freezers. And come winter (where I live) I keep my house and my childrens homes/fridges stocked up with all the salad and Mediterranean veg I grow.

I love a big salad (as in a bowl of lots of different vegetables and sometimes fruit as well). Grilled pineapple is great in it. So is watermelon.

Yes. And my Eastern European relatives always have a bowl of a homemade version on the table during a shindig. It takes me back. 😊

We're having salad tonight - I feel so very MN on trend!

Ours is cold poached salmon, little gem lettuce, baby spinach, avocado, cucumber, red onion, tomatoes and a couple of slices of fresh bread. Mustard vinaigrette.

Does that past muster, MN? Or would that feel your rugby playing sons for a week?

No. It’s not a really big salad. It’s more a selection from the deli aisle with a few leaves added. Plus strange cooked mushrooms.

It’s not balanced, very indulgent and confusing. One protein ok. But you have 3 plus carbs plus weird mushrooms. I’ve never seen a “salad” like it and it looks horrible. A dish for people who dislike salad in fact.

I’ve just made a big salad. A bag of rocket mixed leaves with carrot, sundried tomato, capers, avocado, celery, onion, roasted courgette and half a tin of tuna. Dressed with a lemon vinaigrette.

FYO this is what a massive salad looks like.

If I’d known I was going to post it online I would have chopped things neatly and styled it a bit 😂

My mother was addicted to those when she was pregnant with my DB. I loved the Russian salad one and really miss it.
