What you’ve had for Saturday night dinner

Just got that really. Am doing the January thing if trying to eat a little healthier but usually have a takeaway on a Saturday- so compromise is making a home made curry that still involves butter and cream, but is a better choice than full takeaway with all the bells and whistles

Aubergine stuffed with lamb mince and pine nuts. Spiced with cumin, cinnamon, paprika and tamarind. Was surprisingly easy to make but if I do it again I'm going to up the spices and tamarind as it wasn't as flavourful as I was expecting.

Costco chicken tikka masala and rice with naan. Perhaps a slice of Costco lemon drizzle loaf cake later....can you tell I’ve been to Costco this week!! Grin

Just been out for a curry. We were supposed to be going round to friends but they're poorly. DS has already gone to my folks for a sleepover so we went out. Between us we had:

Onion bhajis
Keema rolls
Roshti chicken
Tandoori mixed grill
Plain & peshwari naan

Stuffed!

We had everyone's favourite dinner in this house. Steak with sauce(gravy), butter and herb potatoes with some asparagus and carrots! Our absolute favourite dish!

Currently reheating a portion of quorn and veg chilli I made in the slow cooker on Thursday, having with doritos and grated cheese, could have had avocado, but forgot to defrost one and haven't been able to go shopping for fresh.

But I made salmon and Parmesan fish fingers , dauphinois potatoes, carrots and broccoli for my boys.

Slow cooker chicken casserole, mash, broccoli, carrots & peas.

Not terribly exciting but cheap & easy! I try to batch cook 2 things in the SC each weekend.

Chicken leftovers will make lunch box pasties & veg will be sort of bubble & squeak with sausages later in week.

Steak, mushrooms, tomatoes, picked onions and SW chips!! 😇Trying to be good but am ignoring the wine Syns as it's Sat night!! DC had pizza and mozzarella sticks!
And deep fried battered pizza in a roll with chips is one of DS's favourite meals from the chippy!! He is 6'3 with a 28" waist - so unfair!!!

Homemade pizza with homemade dough balls. Shop bought pasta salad and coleslaw etc. Carb fest. We've had the habit the past couple of years of having pizza every Saturday night as a treat. Homemade is so cheap and I'm really impressed with my dough skills. Delicious. Kids very happy. This evening I made loads as its DS birthday tomorrow and he had 3 mates over today to celebrate. Mates liked the pizza. Now relaxing with glass of wine ...

We had meatballs (thanks, Sainsbury’s!) in a tomato sauce with some hidden veg done in the slow cooker and spaghetti. Went down surprisingly well! Now wondering what sweet stuff is available on the cupboard once the boys are in bed...
