I cook, DH cleans. Every morning I ask him what he'd like for dinner and he always says he doesn't mind. I enjoy cooking and am happy to spend time preparing something nice but I'm out of ideas and bored of cooking the same kinds of things so am looking for inspiration.
Tonight I made sweet and sour chicken and noodles. What did you have?

Roasted peppers/fennel/red onion with merguez sausages and fried potatoes. Tbh it was a Hello Fresh thing, not my recipe, but it was easy and tasty.

Oven baked chicken and asparagus risotto using leftover roast chicken from last nights dinners. Green salad on the side.

Salmon, boiled spinach and a creamy dill dressing. Also fruit and homemade chocolate sauce.

We're having a go at the meal plans in the book Always Hungry by David Ludwig, which is low carb / low-GI-ish but not as crazy strict as Atkins. A lot of the recipes are a tad overcomplicated for daily use but we've enjoyed the breakfasts in it!

Gnocchi with green beans, chorizo (usually use bacon) and red pepper Philly as the sauce

A version of one of Jamie Oliver's 30 minute meals. Baked salmon on asparagus... Pop gill on high, put asparagus in bottom of baking tray, put salmon on top, drizzle on the oil from a tin of anchovies, then add anchovies to top of salmon, quarter a lemon and squeeze on and leave lemon quarters in baking tray. Add a couple of vines of cherry tomatoes if you fancy it? Serve with veg (broccoli is nice) and done boiled new potatoes.

DH made me have salted caramel tart after my nice healthy felafel salad pitta. Oh, yes. The persuading & arm twisting it took!

Super quick prawn biryani:

Defrost a bag of prawns under running water. Chop some mushrooms and fry them in a large frying pan. Add in a sachet of ready cooked rice (I used wholegrain with roasted veg, but any flavour would do). While this is happening, heat a tin of veg curry. Add the prawns to the rice/ mushrooms until cooked through. Pile into bowls, top with the curry.

DH and DS had chicken breast and I had spinach and feta tart. We had it with homemade cauliflower cheese, peas and mash. It was lovely but I am stuffed!

Slow cooker duck in hoisin sauce, sticky rice and stir fried baby corn, sugar snap peas and red peppers.. Was delicious!

Brown pasta with a tomato, red pepper, tuna, kale, olive and chilli sauce. I loved it. DH pulled a face when he realised it had fish and a green vegetable in it.

It's warm today so had a huge bowl of salad- kale, tomato, roast salmon, avocado, sweet potato, cucumber and apple with a lemon/honey/mustard dressing. With lovely crusty bread rolls.
