What was on your dinner plate tonight?

We had an odd one of trying to use up what we have before payday + what is fresh on offer in Lidl.

It resulted in skin on oven fries, topped with a kind of mexican-spiced beef mince (almost like taco beef) and cheese, with Mexican street corn salad, homemade guacamole and some dipping tortillas.

We are currently creating a meal-planning spreadsheet and will be watching this thread in the hopes of stealing your meals!

Ocado garlic and herb chicken, roasted with new potatoes in the air fryer, on top of rocket salad with some feta crumbled on the top and a dollop of sour cream and onion dip. It was delicious. I must remember to make it again. One of those nights when you don’t know what to cook and just freestyle it.

Quite similar to yours actually! Grated tofu cooked with smoky spices, quinoa, roast veg, but made extra delicious with cheese, sour cream and jalapenos - yum!

Southern fried chicken tenders (the 100% chicken breast ones) with white basmati rice, broccoli and cheap mixed veg. Topped with mayflower curry sauce (from B&m)
Sort of like a rubbish katsu curry bowl vibe.
Going food shopping tomorrow so was just trying to use up what we had, was actually very nice.

Quinoa, bulgar, lettuce, tomatoes, cucumber, home made hummus, green beans, sprouted sunflower seeds. Dressing of EVOO and balsamic. 🌱

We had a ‘use up the vegetables before they’re on the turn’ fried rice meal - onions, peppers, carrots with chicken, sweetcorn and peas in a made up sort of paella dish. Filling and healthy but is wont win any culinary awards

We had a scrappy tea - DH had surgery today and I've spent 5 hours driving him there and back again so it's been a long day. He had scrambled egg on toast as he's had a GA and I had a fish finger sandwich with lettuce, tomato and tartare sauce. It was surprisingly yummy thank god. Now collapsed in a heap with a mug of tea and some biscoff.

home made chicken skewers for me and DH and tofu skewers for dd1 in a random home made spice mix. Roasted herby new potatoes and Greek salad. It was pretty good.

We had sliced tofu coated in panko and fried (made myself), basmati rice, katsu curry sauce from a jar, a handful of mixed salad leaves with sliced red chilli, coriander, spring onions and mixed sesame seeds to garnish. A bit like Wagamama do katsu chicken.

It was really good, the katsu sauce was from Home Bargains - Waku Waku brand or something. Good flavour and heat but sadly full of crap. Didn't see that until rinsing the jar out.

Ham baked by my mum, oven chips, coleslaw and a big salad. We are staying with my parents on holiday and need big, easy, feed-a-crowd meals.
