Daily fruit and veg thread

Does anyone remember a thread from Spring /Summer 2018 where we all counted how many types of fruit and veg we ate each day? Portion size irrelevant, we were just trying to be intentional about eating more variety. I can't find it but thought maybe some posters would like to do it again. I definitely need to eat more and it was a really encouraging and positive thread. I still make the bean and mint salad that someone kindly shared at the time.

I'll start with yesterday:
Onion
Garlic
Kale
Beetroot
Carrot
Blueberries
Sweet potatoes
Chia seeds
Flax seeds
(I think we included nuts, seeds and legumes too)

Well, in that case you need to share the recipe again!

I can't remember what I had for breakfast yesterday.
Apart from that I ate:
Tomatoes
Apple
Strawberries

Does orange juice count?

I think we did count orange juice and even baked beans.
The recipe is now something I throw together but I include chopped red onion, cucumber and pepper, beans or chickpeas as preferred (I use tinned mixed beans), EV olive oil with lemon juice and chopped mint, mix well.

Easier to be up for the prep and eating these foods in warmer weather imo.

Ohhh. I had salmon salad yesterday for dinner , fruit and yoghurt for lunch and yoghurt bark (with fruit) for a snack…

Garlic (about three cloves, so definitely counts!!)

Wish I could claim every day was like this, but today is ham, egg and homemade chips for dinner and French toast for breakfast

Yes, I think we included juice, nuts, seeds, herbs, legumes etc. I have cacao nibs daily but not sure what category they fall under! Will check in later but not too ambitious about Sunday being too veg-full! Happy crunching! 🌈
ETA I see cacao nibs are the processed seeds of the fruit.. don't know what people think about including those.

Good idea and I like the bean salad recipe, could be v handy!

Yesterday:
Grapes with breakfast
None with lunch (but does my seedy roll count?!)
Banana mid pm
Thai dinner with mixed veg so loads - onion, pepper, aubergine, baby corn, cabbage, mushrooms, broccoli and cauliflower
Total: 10 different f&v

Today (planned)
Breakfast: grapes
Lunch: red onion, basil, garlic, tomato, asparagus, broccoli
Dinner: banana
Total: 8 different f&v

Oh, I remember these threads, I loved them and they did very much encourage me to eat more fruit and veg. And I have kept it up, I eat way more fruit and veg than I did for sure. I also did the 30 different plants a week to help my gut biome as I have some gut issues and I do think it helped massively with that.

Looking back that makes me see that I should have added an extra veg or 2 with dinner.

not had evening meal yet but with that should be a corn on the cob and a bit of basic side salad (lettuce, cucumber, tomatoes) although I’ll be honest I may have had enough salad by then and opt for extra chips instead of the side salad!
