I've had a bit of a stressful week so I'm ashamed to admit I stopped and picked up a rotisserie chicken, a baguette and some butter. Hopefully there'll be some chicken left for my lunch tomorrow but no guarantees at this stage.

Why be ashamed of that. Sounds good to me and I did a lazy dinner.

We had easy mac n cheese (do we still say macaroni cheese?). It’s a cheat way, cooked macaroni, carton of single cream, lots of grated mature cheese and grated mozzarella mixed in then seasoned and baked in the oven till the top crisps up. Zero work involved other than boiling the macaroni.

I made this shwawma thing I saw on Instagram. I even made my own spice mix. Was fucking rank. So I had a piece of caramel shortbread and that cheered me up.

Medium baked potato topped with chilli con carne, crumbled tortilla bits and a mound of finely grated extra mature cheddar. Mixed salad on side with light dressing.
Dessert was an ice cream cone....am trying to empty out the freezer for a deep clean.

Kids had chicken goujons, rice, broccoli and carrots. DH had jacket potato with chilli and veg. I had a fried egg sandwich. Bread pudding for after. Once a week I collect all the crusts everyone leaves in the bread bin. See also apple crumble for all the apples that journey to and from school all week.

It was a bit of an experiment - I’ve never cooked one before but it was delish!

I started roasting the pork belly as I usually would for a normal roast.

Then with about 25 minutes to go I made a casserole around the lower 2/3rds of the joint (so that the sauce didn’t reach the crackling and soften it).

The casserole was carrots, cauliflower, kale and green beans in Bisto onion gravy. I often use gravy granules in a casserole because I like the sauce to be thicker.

Home made ramen - Fried Garlic and Ginger in sesame oil. Chicken broth. Shitake mushrooms for umami. Shredded kale, carrots and chestnut mushrooms. Ramen noodles. Topped with jammy eggs, sesame seeds, coriander, spring onion and siracha. 10/10

Chicken thighs and tray bake of roasted new potatoes, peppers, onions, garlic, tomatoes and then baby spinach at the end. Delicious!
