its typically cabbage and roast potatoes mashed up and friend - but other vegetable get thrown in as well as to not waste the food after a roast dinner. You slowly fry the potato mixture to make a crust that is nice and crispy

Try asking a Liverpudlian what the dish 'Scouse' is, though (sometimes called Lobscouse). So many different versions!

Leftovers! Yesterday's dark spring greens and boiled/mashed potatoes, roughly chopped, mixed together, and fried. If you're being fancy, maybe a bit of raw egg to help bind it, or just serve a runny-yolk egg on the side. Ketchup to taste.

There’s only one bubble and squeak- left over brussels/cabbage and mashed potatoes, fried until the underneath is brown and crispy- that’s it, no carrots peas, stuffing or meat added- that’s separate!
Top with fried egg. Brown sauce . Perfect!

I think traditionally Bubble and Squeak was any left over veg, all squashed together with an egg to bind and then fried. So I'd suppose that bubble and squeak is whatever you want it to be. But nowadays it's become a food in its own right, and usually cabbage and mashed potato, maybe with onion and bacon bits.

This is why I always make it myself if I want it. Someone is going to quote the 'it's just leftovers' at you if you order in a cafe, and I'm not usually wanting whatever they've got 'left over'.

I disagree on your last point. I'd be more impressed with a cafe using their leftovers to do bubble and squeak to avoid food waste than one serving the abomination the OP received. It shows a complete lack of knowledge about food.

When I rule the world that require them to undertake retraining or be banned from operating a food business.

It's that sort of ignorance that leads to them passing off spread as butter or serving food straight out of the fridge. I'm only half joking.

I would applaud them using genuine leftovers, but I'd always be just a little bit suspicious about what they considered to be'leftovers' - as in are they maybe scraping some plates where the veg obviously hasn't been eaten into the 'bubble and squeak' pot?
I'm right behind leftovers, not so much with 'leftovers'. They can go for animal feed.

Potatos and cabbage boiled then fried. Usually left over from the previous days dinner so may include other veg if available. Not usually onions as theyre not traditional roast dinner left overs. I've never known anyone put bacon in it, though its often served with 'bacon' ie gammon/ham.

YES! I've three thick (.75") slices of deli porchetta that have turned out to be extremely fatty. Can't put them into a baguette for sandwiches, just too much fat. I will put them in bubble and squeak!! I will have to make mash especially but that's okay. Probably make it so it's less buttery given the fat from the pork. I'll put some mustard through it, whatever green veg I have and serve it as patties with a fried egg on top. Thanks OP!

Basically cooked cabbage / potatoes, mixed and fried, alongside variations depending on taste. I like mine served with mustard pickle.

I only use bubble and squeak to mean left over potatoes and cabbage, fried up. General roast dinner left overs I call rumbledethumps. I know many people just fry it all up, but I prefer to, with e.g. Christmas dinner leftovers, chop it all roughly, mix and press into an oven dish for about 30 to 40 minutes at 200, so the top's all crispy. Goes well with brown sauce. 😋 Sometimes I sprinkle the top with grated cheese and dried herbs, that works nicely too.

My bastard love child of a B&S will see your purist cabbage-filled B&S outside for a scrap, anytime anyplace. 😉
And serving with Baked Beans is a hill I will die on.
However, I will agree on the cold meat bit, that is the correct choice, I just forgot to mention it. I believe we could reach a Boxing Day truce over the cold sliced ham & turkey and the crispy fried edge bits.

I was born in 1949 and am very familiar with bubble and squeak. It's leftover mashed potato mixed with green vegetables, ideally some sprouts. It's fried until it forms a nice brown crust on both sides. I was quite shocked in the 1970s to see it ready-made in a supermarket freezer.

my mum thinks it’s ok to serve someone who wasn’t with us on Christmas Day bubble and squeak on Boxing Day. I think that’s awful, who’d want to eat yesterday’s left overs. So we don’t have guests until the afternoon on Boxing Day so we can have B&S for lunch 😂

What the op describes is less bubble and squeak and more splat
