I think that's the selective screenshotting. Pretty sure there must be multiple occasions where she's led him on or reciprocated. We're only ever going to see the messages that the complainant releases - not suggesting they're directly behind the leak, but what's been leaked is probably the extent of what she submitted to the investigation. And most of these messages seem to be ones after things have cooled between them (yet still she's encouraged him again, after telling him to stop).

Horner deleted the message history from his side, so only the complainant has access to the conversation. Ironically, he deleted it to try and protect it from getting out, but I think if he still had the full conversation there's probably quite a lot of gaps he could fill in that paint a different picture.

To be fair, it is Fiona who has the coco pops for dinner, he just says “they’re my favourite”. Could be lies, I bet he’s never tried them. They’re too brown. He doesn’t look like a coco pop type.
