What simple meal have you eaten recently that was just really satisfying?

Hi,

Just fancied starting a very light hearted thread after being inspired by my lunch. It's sometimes the little wins 🤣

Wholewheat spaghetti with pesto, peas, bit of parmesan and lemon juice. Gorgeous! Don't know what it was about this, but there was something so satisfying about a big bowl of this.

Microwave rice, tin of tuna, some tinned sweetcorn and lots of salt. I love it.

A proper cheese toastie made in a sandwich toaster. (Previously been using a microwave and it is not the same)

I bloody LOVE a jacket spud. Massive rugby ball sized one. Crispy skin. Cheese beans and coleslaw. Loads of butter

I had an avocado squashed on toast with this sprinkled on top for lunch and it was gorgeous.

These all sound delicious! Forgot, I made a tuna mayo and pringle sandwich a few weeks a go (must have been post Christmas with the pringles) and it was so good!

Haven't done crisps in a sandwich for a long time. Forgot how good it was. Also was on thick white bread, with plenty of butter 🥰

I made a chicken casserole in my slow cooker the other day, so simple and used lots of veg that was looking a bit dodgy. We had it with mashed potato and it was so tasty and comforting.

Home mad chicken soup

stock, chicken breast, potato, carrot, onion, pepper and mixed herbs in slow cooker.

I had a cheese toastie for the first time in ages today. I made an attempt to make it healthy - brown bread, mozzarella, spinach & tomato with a smear of pesto inside. It was delicious.

I made chana masala and rice recently that turned out just perfect, if I say so myself. Served with a big dollop of yogurt and loads of fresh coriander.

Tinned sardines, Ortiz ones are spectacular, fried in tiny bit of oil, chilli flakes and lemon zest and juice - on toast with fresh parsley thrown on the top !

hadn’t had sardines for decades!

An appointment overran yesterday so I needed to revisit planned dinner to something that wouldn’t take as long so we had penne and a sauce that was a jar of red pesto, a tin of tomatoes and a little bit of milk, with grated cheese on top. Everyone had seconds and raved about it far more than my usual made from scratch dinners. It was delicious 🤤

Made the Slimming World tomato soup for lunch and couldn't believe how good it tasted - at last I've found a 'sin free' meal I like and it's easy to make.

I do love my breakfast: multigrain toast with butter and marmite. It tastes particularly good as I'm trying to do the 16:8 diet so I'm hungry by mid-morning.

I just did a crisp sandwich ( cheap white bread, loads of butter and ready salted crisps) followed by tea and biscuits! It’s definitely not posh food or some bizarre food from artisan makers but it was comfort food and I loved it 😍
