What simple meal have you eaten recently that was just really satisfying?

Hi,

Just fancied starting a very light hearted thread after being inspired by my lunch. It's sometimes the little wins 🤣

Wholewheat spaghetti with pesto, peas, bit of parmesan and lemon juice. Gorgeous! Don't know what it was about this, but there was something so satisfying about a big bowl of this.

What about you?

creamy garlic mushrooms on brown toast.

(fry garlic and mushrooms in butter, then add cream cheese to the pan).

Microwave veg with gravy and a Quorn sausage.

Microwave rice and veg packets stir fried with egg.

Toast with tomato puree, hot sauce and cheese on top. Can also be a toastie.

Garlic mushrooms on toast.

Steak and salad.

Pasta with tuna, mayo, sweetcorn and a bit of iceberg lettuce.

Fish finger sandwich.

Crisp sandwich.

Sweet potato with butter, marmite and cheese.

I have simple tastes 😆

Like a simple poke bowl
Microwave rice (any flavor) sliced avocado sliced spring onions and poached eggs with sirachi sauce - god it's a fantastic lunch!

I have this every day for my lunch! I have chopped peppers and cherry tomatoes in it too and warm them up with the sweetcorn to soften them. Not that you asked 😂

Microwave rice, tin of tuna in oil, not completely drained away, finely chopped red onion and a very generous dash of soy sauce. Soy sauce make many plainer foods tastier!

Kimchi, chopped baby tomatoes, bagged strong salad leaves, smashed cucumber, leftover chicken and a ceasar dressing made with some hellmans, a clove of garlic grated fine, and a good grating of Parmesan and a squeeze of lemon juice. Add some black pepper. Mix well and eat. It's my daily lunch at work and v low calorie too.

Brown rice (from Sainsbury's) + tin of sardines in water (Waitrose) + chopped red onion, chopped garlic clove, couple of bits of red pepper, 1 round Baby Beetroot (Waitrose) and dollop of tartar sauce (Sainbury's brand). Oh, chopped tomato if you can find one. Bit of white pepper.

Served in a bowl.

Fairly cheap and if you do the brown rice the night before, a good quick meal to set you up for work to avoid the pain au chocolate dead calories at the station cafe.

I have 2
Tinned plum tomatoes on wholemeal toast with malt vinegar and white pepper.
Griddled Tuna steak, tender stem broccoli and grilled tomatoes with balsamic vinegar, rock salt and black pepper.

Either can be on the table in 10 mins.

My kids love "special pasta" that they only get at my mums. It's just spaghetti, loads of butter, black pepper and grated cheese. They love it! Apparently I don't make it right though Blush

Yes that’s the one. Must admit I wasn’t thinking it would be good. I won the raffle this week and that was the prize so I thought I’d better make it then I wouldn’t have to lie when asked about it. HB thought it sounded disgusting but he did try a bit and said it was ok - high praise from Mr Picky.

Loving this - some of my favourite wfh things here.
I love this:

Put some spaghetti on to cook. Whilst it's cooking
Fry 1 chopped garlic clove. Add some more olive oil and juice of 1 lemon. When the spaghetti is cooked add that and a couple of handfuls of capers in and warm through. Parsley/ basil pr Parmesan on top optional but for me I squeeze a more lemon juice and loads of black pepper. I love it so much! The DC wouldn't eat it so it's often a lunchtime treat.

I also like tinned minestrone soup with Tabasco added in and bread and cheese on top.

Haddock poached in milk with mashed potatoes and a bag of steamed microwave veg - 20 minute meal - the potatoes are the longest part - and full of flavour. It's my go to at the minute

Cheddar melted over toast with minced green pimento stuffed olives between the toast and cheese. Meaty, filling, salty and delicious. An indulgent little winter dinner with a glass of prosecco.

Chicken crown cooked in the air fryer and then rested.

Part-baked sourdough baguette in air fryer. Spread with mayo and a bit of hotdog mustard. Add a few slices of the chicken. Heaven!

I've had barely any appetite since having COVID a few weeks ago but you've all made me start craving something delicious and completely unhealthy so I'm going to ask my lovely DH to make me some halloumi fries tomorrow,the one's he makes taste amazing and he drizzles a small amount of honey on them whilst they're still nice and hot.

I'm a big fan of SW soup too, as are the dc (DH not so much).

I rolled my eyes at myself and thought 'WTF am I doing here' the first time I made it - but it's really very good!

DS made air fryer cheeseburgers yesterday. I topped mine with sauteed onions, Danish blue cheese, lettuce, tomato, and yellow mustard, on a lightly toasted sesame seed bun. Glorious.
