What simple meal have you eaten recently that was just really satisfying?

Hi,

Just fancied starting a very light hearted thread after being inspired by my lunch. It's sometimes the little wins 🤣

Wholewheat spaghetti with pesto, peas, bit of parmesan and lemon juice. Gorgeous! Don't know what it was about this, but there was something so satisfying about a big bowl of this.

Steak pie and mash is what we are having tonight. Last night was cod and chips from the chippy.

A perfectly ripe pear, good blue cheese and walnuts.

Naice ham, cherry tomatoes and eggs sprinkled with grated cheese and chives, all baked in a little dish.

Longley Farm cottage cheese straight from the pot.

That all sounds very good.

Just had egg, chips and beans. My girls are laying again after a winter hiatus and I couldn't be arsed to cook so went for the simple things in life.

Rice with spinach & grated carrot stirred through, soya sauce and baked tofu on top. Squeeze of lemon. Delicious

Scrambled eggs with fried courgette (fry the courgette with sliced red onion). Just amazing. My current favourite lunch.

Asdas extra special sweet potato and butternut squash soup with warm baguette, so good!

When I'm feeling lazy and want something unhealthy I just airfry frozen fries and make cheesy chip buttys, so unhealthy but so good!

Microwave rice, tin of tuna, some tinned sweetcorn and lots of salt. I love it.

I have this every day for my lunch! I have chopped peppers and cherry tomatoes in it too and warm them up with the sweetcorn to soften them. Not that you asked 😂

Sandwich thin toasted, spread with fancy hazelnut choc spread (a supermarket sub for Nutella) and sliced bananas, served open face and sprinkled with chopped nuts. 😋 Really hit the spot!

Similar to you OP - spaghetti, prawns, cherry toms, lemon, chilli and Parmesan. A good fresh tasting quick meal 😀

Sometimes I roast a chicken in the afternoon and just set it out for everyone to pick at for dinner. DH might have a sandwich, DS likes his with mash, DD and I prefer to pick strips off and eat it the way it is.

A sausage casserole, like, just onion and browned sausages, a packet mix casserole sauce and some mash- oven did the work, was utterly lush! Going to have that again soon.

The meal I have literally just eaten. I’m shattered after getting back from a 2 night work trip late this afternoon and just could not be bothered cooking. I ended up having wedges covered in melted cheese dipped in mayonnaise. It really hit the spot and I’m now full of carbs and happy.

A seeded bagel thin toasted, a mashed up very over ripe avacodo a slice of leftover smoked ham.

Cooked Pasta, spinach, cherry tomatoes, sliced black olives mixed up with a spoon of pesto. Cook in microwave for one minute or heat and mix in pan to wilt the spinach and warm through the tomatoes Add mozzarella. Delicious

I had really fine spaghetti (3 mins boiling) with olive oil, chili, garlic and parmesan with fresh parsley

Was so delicious and took tops 5 mins. I ate it so fast.
