What simple meal have you eaten recently that was just really satisfying?

Hi,

Just fancied starting a very light hearted thread after being inspired by my lunch. It's sometimes the little wins 🤣

Wholewheat spaghetti with pesto, peas, bit of parmesan and lemon juice. Gorgeous! Don't know what it was about this, but there was something so satisfying about a big bowl of this.

What about you?

I make Scotch broth in my slow cooker with ham, pearl barley, random pulses and random veg. So tasty.

Diced garlic in pan, add a tin of tomatos, chili flakes and two eggs…Nigella’s Eggs in Purgatory and it’s gorgeous with sourdough.

Nothing beats beans on toast!

Beans and cheese on toast does. And I have been known to add crispy streaky bacon.

I went to see my dad and I was doing all the cooking. I got a supermarket delivery and the first night I just did slices of melon, cooked meats, salad, cous cous.

He described it as 'delightful'.

Just seasoned and fried some white fish (can’t remember which kind) in loads of butter. Very hot and filling.

The other night we fancied chicken & chips from the takeaway. Instead I roasted chicken thighs which we already sprinkled with a chicken seasoning and did oven chips. It was bloody lovely.
