What simple meal have you eaten recently that was just really satisfying?

Hi,

Just fancied starting a very light hearted thread after being inspired by my lunch. It's sometimes the little wins 🤣

Wholewheat spaghetti with pesto, peas, bit of parmesan and lemon juice. Gorgeous! Don't know what it was about this, but there was something so satisfying about a big bowl of this.

What about you?

Some of these are making me so envious. I've recently developed perimenopausal belly spread so am trying to eat healthier but I really want a jacket potato or cheese, ham and salad sandwich with crisps OR a a massive bowl of spaghetti bol.

Fry onions lightly, add sliced smoked salmon, peas and sweetcorn. Add dollop of philly cheese. Stir through cooked pasta. Salt and freshly ground pepper to taste. Lovely.

Made the Slimming World tomato soup for lunch and couldn't believe how good it tasted - at last I've found a 'sin free' meal I like and it's easy to make.

Is this the soup made with tinned toms, baked beans, carrots and pickled onions?
I’ve never been brave enough to try it. 😀

A perfectly ripe pear, good blue cheese and walnuts.

Naice ham, cherry tomatoes and eggs sprinkled with grated cheese and chives, all baked in a little dish.

Longley Farm cottage cheese straight from the pot.

I do a spaghetti with grilled cherry tomatoes till they char a bit, chorizo, garlic and chilli - it's absolutely delicious. Take less than 10 mins if I have fresh pasta

Frozen french fried done in the same air fryer basket as a precooked chicken leg. Lovely crispy skin 😁
Added some frozen peans - Im not an animal🤔

Gnocchi with pesto and crumbled up feta. It was delicious. Love the texture of gnocchi.

plus my pancakes yesterday were divine, sliced banana and Nutella, they were amazing.

Thick bloomer bread, salted butter, cheddar cheese, sliced pickled onions, topped with salt and vinegar crisps. Sandwich of the gods 😋

Friday night is comfort food night and we usually have something like fish finger sandwiches, fajitas or steak baguettes made with flash fried beef escalops, fried onion and horseradish.

I made a Thai curry with just cauliflower, peppers, baby corn, kale, chickpeas and green Thai curry sauce recently and it was so delicious I ate far more than was comfortable. It was sheer accident, thought we should have a meat-free night and just rummaged in the fridge, but will definitely be making that again.

I’m off today and dry fried a few slices of bacon in a pan, added in an egg when they were crispy, and had it all on a toasted English muffin with sriracha for lunch. It was so delicious!
