What simple meal have you eaten recently that was just really satisfying?

Hi,

Just fancied starting a very light hearted thread after being inspired by my lunch. It's sometimes the little wins 🤣

Wholewheat spaghetti with pesto, peas, bit of parmesan and lemon juice. Gorgeous! Don't know what it was about this, but there was something so satisfying about a big bowl of this.

Today's cheese sandwich, fresh brown bread, butter and a decent slice of cheddar. It just hit the spot.

A side of salmon slow cooked in the oven on top of a massive armful of parsley, drizzled with olive oil and sea salt.
We had it with couscous full of diced cherry tomatoes and mini cucumbers with more parsley in, and it was just a perfect reset of a meal. Really fresh and simple after a lot of stews and rich food lately!

Home made sausage rolls! Used ready rolled puff pastry and skinned some sausages so took very little prep! But was really tasty served with baked beans!

I think I might eat my way through this list!! Although there was a noodle with peanut butter combo I think I might not enjoy -! And I’ve never tried spam so maybe should .

i had M&S super seeded bread toasted as a sandwich with mayo , a tin of mackerel in olive oil and very crispy lettuce from our veg box . It was heaven.

Halves baby plum tomatoes, a chopped chilli, clove of fresh garlic, pesto or fresh basil, pine nuts and lots of st Agur cheese stirred though quick cooked spaghetti - delicious

I made a really lazy curry the other night. Curry paste from the cupboard that was going out of date, pumpkin, spinach, coconut milk and a can of brown lentils because I was out of chickpeas. So good!

We’ve just had chicken with red pesto, peppers, onions and crème fraise stirred through and served it with tagliatelle. It was delicious and less than 20 minutes to make.
