Love these threads for getting dinner ideas. I'll start. We're having chinese chicken fried rice, using some of the whole chicken we roasted this morning.

What are you having?

Whole braised chicken with
lemon and olives
SERVES 4-6 | PREP 25 MINS PLUS RESTING
COOK1 HR 55 MINS | EASY | LC
1 whole chicken
50ml extra-virgin olive oil
2 onions, roughly chopped
7 garlic cloves, finely sliced
2 tsp ground ginger
2 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp saffron powder or a pinch of saffron strands
2 litres fresh chicken stock
3 lemons, halved
300g jar pitted green olives
2 tbsp each chopped coriander and flat-leaf parsley,
plus extra of each to serve
3 large potatoes, peeled and chopped
1 Season the chicken by rubbing salt all over, then set aside to
rest. Heat the oven to 160C/140C fan/gas 3. Heat the oil in a very
large, wide, deep ovenproof pan over a medium heat and fry the
onions, garlic and spices with a pinch of salt for 6-8 mins or until
golden brown and soft. Add the stock, turn up the heat and bring
to the boil. Reduce the heat to a simmer.
2 Squeeze the lemon juice into the pan, then add the spent
lemons. Drain the olives, reserving 30ml of the brine from the jar.
Add the reserved brine and olives to the pan along with the herbs.
3 Add the chicken to the pan and cover with a lid or foil. Transfer
to the oven and cook for 1 hr. Add the chopped potatoes and
roast for a further 45 mins until the potatoes are tender. Remove
from the oven and leave to

i'm making this first time ever not really sure how it will turn out as a bit of a mush mash of stuff.
i try and do one new thing a week but frankly they are rarely repeated
my DH calls them my revolting internet dinners( this is from delicious magazine!)

Ham egg and chips! We have a ham that needs cooking and the chickens have been laying like crazy so lots of eggs to use up. Also weirdly way too many potatoes as we didn’t use up last weeks ones before this weeks ones arrived. Perfect aligning of the stars here 😂

TheChosenTwo · 24/10/2022 17:34

Ooh snap @Cherrytree77

Alsoplayspiccolo · 24/10/2022 17:34

Vegetable lasagne, with loads of veg and kidney beans, plus salad.

Blowyourowntrumpet · 24/10/2022 17:40

A tin of soup. I don't feel very well and can't be bothered to cook

mrsfeatherbottom · 24/10/2022 17:42

A dish called fragrant pork which is sausage meatballs in a kind of tomato risotto which I serve with mashed turnip. We haven't had it in ages and DD loves it and she had a crap day at school so I thought I'd make it for her.

KennAdams · 24/10/2022 17:43

Slow cooker chicken curry from the tamingtwins website. ☺️

grapehyacinthisactuallyblue · 24/10/2022 17:45

Same old Teriyaki Chicken with vegs and rice. Ds's favorite. Asked what he wanted for dinner. Expected answer as always.

Chateaudiaries · 24/10/2022 17:46

Butternut squash and black bean chipotle stew with orzo pasta for the dc and rocket salad for dh and I.

Judystilldreamsofhorses · 24/10/2022 17:48

I cooked double last night, so tonight is leftover meatballs with roasted Moroccan spiced veg and chickpeas, served on cous cous. We often do a two-day thing on a Sunday to ease into the week with.

Cottage/shepherds pie but with turkey mince as I have some to use. My DP calls it "gobble pie" 🤣

How do you make the turkey mince tasty? I find it rather bland. There's some in my freezer that needs using up!

SweetestThing · 24/10/2022 17:51

Pasta with chicken and chorizo, in a tomato and cheese sauce, with broccoli and spinach on the side.

lilroo87 · 24/10/2022 17:52

@lmnabc tbh, I just make up the recipe each time I've made it 🤣
This one I've used beef stock with a dollop of marmite to make it taste more beefy rather than turkey. It's got pepper and mixed herbs then just garlic, onion, frozen mixed veg (cause I can't be bothered with chopping) and then some tomato purée.
Cheesy mash on top.
I can't remember what I did in the last one but would have been similar. The mix doesn't taste like turkey mince and definitely not bland

Justcashnosweets · 24/10/2022 17:52

Am out tonight at a Turkish restaurant with friends so not sure yet but am certain that wine will be involved!

lmnabc · 24/10/2022 17:54

@lilroo87 Thank you , will give it a try Smile

SealSquish · 24/10/2022 17:56

Love reading these threads for ideas.

We’re having leftover chilli with jacket potatoes, cheese and jalapeños. Simple but tasty

bluechameleon · 24/10/2022 17:59

Sea bass baked with red onions and cherry tomatoes, new potatoes, asparagus and broccoli. The DC won't eat any of that so I'm also doing breaded chicken, garlic bread and carrots.

MalbecMakesMeHappy · 24/10/2022 18:04

Chicken, bacon and spinach spaghetti alfredo

Bluevelvetsofa · 24/10/2022 18:21

Left over small amount of beef, turned into curry, with rice, onion bhajis and poppadoms.
