What are you cooking for tea in this heat?

That doesn't involve standing over the oven? I'm melting in my office and not looking forward to cooking tea later...

It's a cold, picky tea here tonight. Ham, cheese, salad, houmous, bread sticks etc. My DD asked for a roast on Sunday 🤦‍♀️

It’s been boiling for the past few nights. We’ve had:
Fajitas (minimal cooking for just the filling).
Lamb Kebabs with salad and Cous Cous and pitta breads (I did them in the oven and just left them until they were done so I didn’t have to stand in the kitchen).
Rotisserie chicken with salad and potato salad / microwave herby potatoes and crusty bread.
Tonight is curry from the freezer so will just need a blast in the microwave and some rice doing.

Last weekend we barbecued lots of meats and chucked them in the freezer, so tonight it's chicken legs with a cold Thai noodle salad and an Asian slaw. Then watermelon for pudding.

I've just had soup for lunch, mind you

At a pinch I might roast some veggies to put on top of a salad tomorrow.

I'm doing salmon and noodles. Salmon only needs to be in the oven for 15 mins so I can cope with that (just about!). Noodles take 3 mins! (Raw veg added)

Prawns and the simplest of salads- cherry tomatoes and cucumber slices drizzled with olive oil. Grapes for dessert.

We are having homemade pizzas and salad tonight
Also planned for this week
fajitas and wedges
spaghetti bolognese (slow cooker) and garlic bread
salmon bake with green beans

Last night it was just me and DH so we had the Hairy Dieters cooked breakfast. It cooks in less than 10 minutes and we didn't eat until 7pm so it was starting so cook a little by then.

We both really enjoyed it as well Smile

I've got a slow cooking lamb leg in the oven at the moment, kleftiko style. We'll be eating it later at room temperature with pitta and tzatziki.

We're visiting my mother in Spain for a month, she insists on a fully cooked meal at least every three days, and wants to eat at 7.30!!!!
Last night we had pork on the outside griddle with potatoes, broccoli and asparagus. It nearly killed me cooking it (cos she never cooks when we're here Angry)
Tonight she's relented and we're having pizza and salad.
Tomorrow it will be aubergine bake.
Thursday we will be eating out !!
We have four more weeks of this heat. DD and I would just eat salad but mother loves her meat and veg, even though it is beautifully fresh.
My favourite here if she insists we have all the food groups on one plate is to buy a whole Sea bass cooked en papillote, suitably light but seems to satisfy her!!

@camandmitch that sounds brilliant! Just cook the salmon and then the noodles separately? Do you put anything on the noodles/veg?

Salad would be a brilliant idea except my husband would not be impressed Grin he's on a night shift and would soon be heading to the kebab shop.

Did fajitas last night and pasta the night before.

Am thinking about these salmon and noodles Smile might borrow that idea camandmitch

We’re having this. A short time in the oven and a short time cooking the pasta. It’s a really nice summery pasta salad. Plus home made olive bread I baked in a moment of madness.

We are having a (premade) goats cheese and roasted red pepper quiche with salad tonight. Tomorrow is (I'd usually have this for weekend breakfast), smoked salmon and cream cheese on toasted bagels.

I've made up some meatballs, in the vague hope of a cooler day to put with some tagliatelle.

I just need some nice fresh cold white wine.

Today we’re having chicken Caesar salad.
Which is actually very filling, but you could add plenty of crusty bread on the side for DH.

Salmon and salad. Cooking the salmon in a minute so it can cool down for dinner later. Might do a rice salad as well if I can be bothered (most likely not though - too hot here)
